Another question I'd have would be about demand. Granted this would depend on the server, but in TBC, folks were switching professions fairly frequently to get all the musthazbestgeerevr items each professions offered. Or, if they were min/maxing, to get the ring enchants or JC trinkets or what have you. Now that Blizzard has removed the BOP best in slot items from professions, do folks still switch around professions?
If not, that severely curtails the potential customer base. You'd still have a few switchers, but you'd basically be limited to the alts of rich folks who can afford the cost of the kits. New players/re-rollers can't afford to use the service and even many alts could not affort the huge up front costs this would require (especially if they are still saving for their epic or cold weather training).
I think it's a very interesting idea. When I was planning out my DK, I became acutely aware of just how awkward and painful the old world profession leveling can be. I recently leveled Jewelcrafting to 300 over the course of a weekend, and I must say that a kit like you're proposing would have been a god-send. As it was I spent the entire weekend in a cycle of mining, hitting the AH up for the gems I needed, and selling off the massive quantities of useless smeg the leveling process produces.
At a more modest level, even if you didn't want to start with an entire package, just stockpiling the
moss agates,
star rubies and especially
aquamarines (oh, how I grew to hate aquamarines...) for a "Jewelcrafting Kit", so to speak, could be a great prospect, considering the uneven supply and the massive demand these gems produce.
With respect to switching professions for min-maxing, while the loss of BoP items seems to have decreased the need for the masses to have a particular prof for a weapon, say, you're not really gearing your business model to appealing to the masses. It seems like the better opportunity is in organizing packages for raiders/PvP'ers that want to squeeze that last bit of advantage out of profession combos. The professions do still have a few perks unique to them, and if you make it easy enough, there should be a market, say, for people that want both BS (sockets) and JC (Jeweler's gems).
As my example above would indicate, my recommendation would be to focus on BS and/or JC in terms of kits. The herbalism based professions seem (I could certainly be mistaken) easier to level, and in any case are usually regarded as less min-max; the ease of farming cloth for any high level char makes tailoring seem too accessible as well. Enchanting might be viable, and if you could work it out to buy the smeg produced by the people using the leveling kits you could probably have quite a synergistic system going.
All that said, you're still looking at something that would take a load of time and energy. On the other hand, done as a service of a guild for a few members I could see it being accomplished without it being a terrible chore.
