Generally, you need to wait until around 35 to try the prot aoe grinding method, and it becomes better after 40 with holy shield. When you use this method, you have to stick to certain places that don't have ranged/casters since you're relying on melee attacks. In this way, it can get tedious, but I must say it levels incredibly fast.
In Outland, stick with ret or prot. Ret gets good at 60 with Divine Storm. There are fewer places to do prot aoe in outland than there is in Azeroth, so you can go with whatever makes you more comfortable.
Northrend has a few areas that are still prot friendly, and even holy friendly (similar to prot aoe, you just consecrate a ton of mobs to death while you keep yourself healed), but you'll probably need to do more questing for rewards, and that can usually favor Ret.
With LK now out for 6 months, finding groups for the low level Northrend dungeons isn't too easy, so using that as XP while holy isn't all that great. I'd wait until at least 75 to do exclusively holy if that's your initial goal. Holy is also the best spec to solo group quests.

If you like to be able to stand in a sea of mobs and still come out at 100% HP & mana. Roll prot.
If you wanna come flying off your mount and have the mob hit the ground before you do. (face)Roll ret.
If you feel like healing the mobs to death (not really holy shock does shocking damage sometimes). Roll holy.

This. I have to agree with svirve. And after s/he picked me apart about Netherwing money, you know how I hate that. (em arr jokes, <3 svirve)
The only thing I'd note on top of that is that speed-wise, just grit your teeth and ret your way to 78 or so. If you're really interested in tanking/healing, spec it out then and start instancing. You'll hit 80 soon enough, and it'll give you the <insert role here>-ing experience you need before you hit 80 and heroics.
It's pretty close to what I did (pre-dual-speccing), and it works well.
