I'd have to say when I had saved ALOT of gold for my epic flying in WOTLK since I hadn't gotten in BC. When I hit 78 (or 77, can't remember which one) I ended up spending 5000g on training, 200g on a mount, and I think 800g on cold weather training.
6000g gone in five minutes, leaving me with no gold.

Spending a small fortune on mats to craft Dark Iron plate gear when I was in my 50's (just a couple of months after I started playing WoW). Lava Cores, Fiery Cores, Blood of the Mountain etc.
Then realising that A) nobody runs Molten Core, so the gear was kinda useless and B) I could get gear twice as good at a tenth the price, from the AH, that people had picked up in Outlands.
That was a few hundred Gold wasted, back when a few hundred gold was weeks of work.

I don't actually see that as stupid. It is really useful to have fast/cold weather flight.
The most stupid thing I ever bought was 1900gold for the Lifelike Mechanical Toad schematic. I made some gold back selling them on the AH, but it was monumentally stupid to spend that much for a pet schematic.
/facepalm, I need to read the topic more carefully, forgot that it was suppose to be something stupid, not just whatever you spent alot of gold on. My bad >.<
Also, I had been an engineer... but gave it up for enchanting.

Well, I kinda didn't spend this on anything... but one day I was bored and I asked various pop-quiz questions on Trade Channel and mailed around 20g to the first right answer lol. I sent a total of 160g. For my defence, it was the day before my wowtime expired and I thought I wouldn't come back in a long time (if at all) lol. Not that I miss the money...

1600g for the Wyrmrest Red Drake and 800g for the Hodir Mammoth... I already got the Bronze Drake for free and after riding around on the Mammoth for 5 minutes I quickly decided I like my Dreadsteed much more.

I spent about 500 gold on a
Titansteel Destroyer
for my kitty feral druid after he had just hit 80.
I only bought it because someone had offered to make it for me at that price, but it was still dumb of me to buy.
