Night Elf - Most likely Japanese. You can tell that from their buildings, and their ramblings about balance.
Human - Typical American. Females look a bit more %^&*ty than what they're supposed to be but it's just my opinion
Dwarves - Scottish/Irish. Noticeable from the accent and the drinking issues
Gnomes - The nerd everyone loves and sometimes hates
Draenei - Middle Eastern/gypsy stereotype.
Worgen - Victorian England. The Northern English accent (I'm not a native so I'm just guessing) is present on other NPCs outside Gilneas
Orcs - African-American but it's mostly dance related. Also the original orcs were sorta brownish so Blizzard maybe decided to point that out.
Undead - Punk, Goth, or Emo culture. If it was language related I'd say formal British English but it appears it's mainly linked to the Punk subculture.
Taurens - Native Americans.
Trolls - Jamaicans
Blood Elf - Females are just the typical "Beverly Hills" girls, spoiled and overly attached to their looks. Males are also concerned about their looks so we can't help associating them with the current gay stereotype (didn't mean to offend there).
Goblin - Males are mostly Jew/American, even if some are Italian/American. Females are all Jew/American(##RESPBREAK##)2##DELIM##Ashelia##DELIM##I'd like to issue a friendly warning... the way you've described some of these ethnicities are fairly problematic, especially things like "jew" and "orcs were brown so Blizzard pointed it out." I also take issue with how you've stereotyped a sexuality. I would encourage you to try to write your thoughts better next time so as to offend less.

Emo? No, not really. Undead attempt to hide most of their emotions.. Happiness, joy, love, disgust, and fear are all rare to find, and those expressing themselves are commonly shuned. (Although rage, respect, and pride are all fine.)
Punk-goth with some cyber-punk styles thrown in with the Apothecaries. And British-gothic is what their buildings scream to me.

When I think of orcs(primarily the variety on draenor), I think of african tribal cultures, like Zulus. Also:

Except, they do not protray German traits. (at least not modern Germans. Possibly Nazi Germany, but that is a streatch.)
