I myself like engineering on hunters, to make my own guns and goggles and stuff, while I like Leatherworking on my rogue. Just personal preference, I don't know how good the combos I just said were, but I like them.

I agree that Engineering may have more utility for the hunter, very slightly. You can always craft the engineer items and mail them to the hunter. The most important ones aren't soulbound.
My thoughts?
If you like profession leveling, you will most likely end up with maxed professions well before 80.
I have a 71 DK (probably will stay 71) with maxed inscription, all in-game glyphs.
I have a 71 druid (hope to level to 80 and primarily play as resto) with maxed herbalism/alchemy.
My 80s are Miner-Engineer, Miner-Skinner, and Enchanting-Jewelcraft.
I LOVED having enchanting/JC while leveling. Every new piece of gear could be a skillup, and when JC items weren't big sellers, they fueled my enchanting mats.
You may want to put mining on your JC shaman, make it a tad easier. It's not likely you will need 4 skinners to fund one leatherworker.
Having multiple Titansteel cooldowns at high level will be nice, for Engineering and blacksmithing alike.
Alchemy, you will probably want transmute spec for the ability to transmute saronite bars to titanium, and transmute epic gems for JC.
Sounds like a fun project!
