I think the reason you're not getting a response, is that your desire to know every single move that every player in your guild makes seems...creepy.
I'll completely agree that the "add-a-rank" system is horrible, but i don't think that is something an add-on can fix. I think that Blizz will have to fix it.
As for the rest of your complaints, it seems like you might have some control issues. In a 200 member leveling guild, you're going to rotate members as fast as you change your socks- it's the nature of the beast. The guild log should give you an idea of what is going on, but there is no need to track every level 3 that comes and goes.
And, if you're on most of the time (like you say you are), and you still feel that you don't know as much as you need to about what your officers are doing it begs the question...what are you worried about them doing? What could possibly be going on that is so horrible that if you miss a couple of lines in a fast moving guild log, it could disrupt the guild?
As far as the bank, of someone is abusing it repeatedly, you'll get to see it in the existing log, even if you don't see every single thing they take out. I doubt there is any single item in the bank of a leveling guild that is worth that much- you guys aren't stocking primordial saronite. Bank abuse for a leveling guild would be more in the form of a large number of withdrawals.
I can't imagine that anyone has made an add-on that lets you write a dossier on every guild member, and keeps infinite pages of guild and bank logs, because I can't imagine a guild that would need it, or that many GM's would want it.
My adive would be to step back and relax- as long as everything is going smoothly, then just enjoy the game. If a problem comes up deal with it, but don't go crazy LOOKING for problems.

I came looking for a Guild add-on that would track players (merged with their alts) so that I could see what days and times had the most players on and for how long - for the sole reason of scheduling raids based around when people normally play anyway. It's frustrating posting Raids on the calendars, having people no-show, or show no interest at all. It's time consuming to poll each individual member on their availabilities and preferences. It would be nice if there were an add-on that could track all that automatically.(##RESPBREAK##)16##DELIM##asakawa##DELIM##Things change a lot in 4 years with addons going into and out of development. As such a thread this old is very likely to contain outdated info putting it into "necro" territory. If you haven't received the assistance you needed then feel free to make a new thread to ask for more help. If you do you should make it in the UI & Macros forum.

Managing a guild is never easy at the best of times and you cannot do it alone when you are getting to the size of membership that you are talking about there. You need to have several people with their own responsibilities that you trust to get on with it and let you know if there is a problem.
Use what the system has in place to your own advantage, so for example we used to keep a joining date noted in the officer notes and also any infractions. We had officers that specifically looked after vault security, recruitment, raids, levelling etc, five upper rank officers that looked after the whole lot.
As far as scheduling and people not turning up that is just a factor of life and human nature, but again, use the officer notes to keep marks on people that do this often, just a number will do as long as you and the other officers know what it means.
It is hard work running a guild and there are some things in there that make life a little easier if you use them for your own means, but otherwise it is just a matter of developing your own management style and procedures.
