I recall it is 600 Defense when it stops helping IBF reduce damage, but still gives dodge/parry/miss. Defense is a decent stat, but nothing to gem/enchant for.

Defense doesn't give anything beyond 570, no Parry, Dodge, Miss. It's the "hard-cap."
Could you please link something that shows/proves this? I did not realise there was a hard-cap for defense. Diminishing returns on the stats, yes, that I understand.

I fail to see the connection between 61.71% avoidance and 570 defense rating being some sort of imagined hard cap. I also don't see how you're calculating that from the armory profile.
The trouble with total avoidance is that the game will tell you your actual parry percentage and dodge percentages versus equal level mobs via tooltip. But there is no tooltip for your chance to be missed.

The Hit Cap for Meele is 8% so maybe we can deduce the miss cap is 8%? Then we just need to calculate how much Defense is required to ensure that you have an 8% chance to be missed and voila hardcap? (Which would be 600 defense btw).
Oh, ok. That's not at all how diminishing stats work. I believe miss caps out at 16%. As your defense rating increase, you approach the 16% miss rate asymptotically.
Pretend it took you 1000 rating to reach 8% miss. If you now add another 1000 rating, you don't end up at cap, you end up at 12%. Each 1000 rating points takes you 1/2 way to cap. Adding another 1000 brings you to 14%, another 1000 to 15%, another 1000 to 15.5%.
