Despite being insanely rude in thier replies, the above posts are correct. There arn't any spreadsheets for rogue pvp.
Mavanas' Simcraft sheet does at least allow you choose all the subtlety talents, however it doesn't contain any pvp items.

And keep up your pve rotation. Wait, no. Your best bet is probably shadowpanther.net. However garbage it might be for pve, it's actually moderately useful for pvp.

I think what the others are trying to say in a snooty manner is that PvP is not all about raw DPS performance; it's a balance between DPS and survivability. Theorycrafting is possible because PvE bosses are, for the most part, pedictable, in that they will have a static amount of armor, dodge, etc., so we can determine a theoretical outcome performance based on certain stats, but PvE is not predictable. Perhaps one opponent will have more resil than another, more armor, mana shield, etc. There would be no way for a spreadsheet to give you any numbers that would help you gem and enchant your rogue in any way.
I guess if there's still any question in your mind as to why this is not plausible, ask yourself (and please tell us if you come up with an answer) what would such a spreadsheet tell you?

If you're Mut, gem AP. Chances are, at your gear level, you have enough resilience through main pieces of gear, so just fill in the rest of your slots with your best PvE pieces and pwn face.
Spreadsheets are also going to tell you what the best sustained dps is. If you want more burst, some spreadsheets allow you to decrease the time of the encounter and get the best dps that way. Its slightly more bursty and less sustained dps. Problem is, I don't believe they go as low as a PvP encounter nor do they use PvP specs.
