One thing I think Blizzard did really well in Wrath was make sure that you're always aware of the Lich King as a constant threat. Unlike, say, Kil'jaeden or Illidan in Burning Crusade, who you only saw if you raided endgame content.
The Lich King is a major player in the Death Knight starting zone, and he makes regular appearances all over Northrend. If you search for "The Lich King" on Wowhead, you'll get over a dozen results.

To actually answer your question, yes..err, probably, ...maybe?
LOL. Seriously, there are a couple things that will come into play. First, there is a very good chance that you and you wife will begin to level much faster as time goes by. Better gear and more players in the level range as yourself will happen once you make it to the Outlands. Quests start rewarding more XP, and once you hit 55, the addition of all the DKs makes grouping for dungeons much easier, especially if one of you is able to heal.
Second. Unless another major change in emblems occurs, ICC gear will still be a stepping stone that won't be skipped over like Naxx and Ulduar have been. While they will no longer be "end game", they will likely remain a step in the process to gear for later raids.
Now, if you indeed do not make it to 80 before Cata hits, they may be more of a nostalgia run, much like Tempest Keep, Molten Core, and Black Temple are now. But, unless you just simply don't play the game much at all, I would say you will most likely reach 80 before Cata releases.

Well.. seeing as most of the times he shows up one of two things happens: Either a section of his army gets destroyed, or a high ranking commander is killed lol. I don't see that as a threat, more of a 'god damn it, not again' moment lol.

Me and my wife are slowly leveling characters up. We are currently at 45, and it's taken us a while to get there. At the pace we are going, we will certainly not get these toons to 80 by the time Cataclysm comes out.
Anyway, my point of this post is to ask: If we don't see the Lich King by the time Cataclysm comes out, will we ever? Will that content disapear? I really hope not. I'd really like to experience it, but I like our pace of advancement. We are really experiencing the world, and it fits our life. I don't care for power-leveling.
Currently the only ones who are capable of seeing the Lich King are those who are ultra-geared and in top-raiding Guilds. That's the way Blizzard made it, and that's the way it'll stay, unfortunately.
Currently, nobody can see the Lich King. His halls aren't open.
In a few weeks, his halls will be open... And only well geared and skilled players will see him.
In a few more weeks, attempts to unlock him will increase exponentially. Well geared but lesser skilled guilds will see him.
A few weeks after that, we will get the Ashen Verdict's buff. Moderately geared and skilled players will see him.
Yet a few weeks further, the Ashen Verdict's buff will get stronger. Moderately geared scrubs who have enough time to blow 49/50 attempts on Sindragosa will see him.
By the time 4.0.x hits, he will be farmed by anyone who is dedicated enough to get gear via heroics.

And once people are 85, there'll be the occasional steamroll for achi & fun, like the old raids are today.
If you want to, you'll see it, it's just a matter of when :)
