Hmm the gems cuts make ok money. I normally go for the demends cuts first. Stam,Strenght,Intell,and Sp are all used cuts that make money.
Enchanting
Sell the mats. Or use vellems to scroll the enchants and sell them in ah.
Mining
Smelt the ore and sell it. Or sell the ore whichever sells the best.
For the best advice on makeing money with your professions look at Wildhorns topic. I belive he has it linked in his Sign. If not then you may have to look on the next page or so for it.

Step 1: Mine ore. Saronite, titanium. Can be replaced with AH mining, if you are not of asian descent.
Step 2: Sell any eternals that come as side product of mining, except Earth.
Step 3: Prospect ore.
Step 4: Cut resulting rare and epic gems into best-selling patterns, and sell them.
Step 5: Using uncommon gems from prospecting and crystallized earth from mining, make tons of blue/green rings and necklaces.
Step 6: Disenchant said rings and necklaces.
Step 7: Sell resulting enchanting materials.
Used to be VERY profitable. Then they introduced disenchant roll, and now all dungeon greens get DE'd, when enchanter is in group, resulting in more basic enchanting materials entering the market and crashing the prices. And epic gem prices have stabilized at a low price point too. Still, the income is good. Basically, everything depends how cheap can you get the ore.
I personally find that transmute-mastery specced alchemy works very well with this. Utilizes mining eternals to turn rare gems into epics, and provides titanium bars for titansteel cooldown.

With enchanting, I can generally make good cash on the Berserking enchant. You can buy mats for about 350g and sell the scroll for 450g. Good for 1 or 2 sales per day. The 50 sp to weapon is cheap on mats. it's the weapon vellum that actually costs the most on that one.
Don't forget to make your Icy Prism. Frozen orbs are cheap. Good way to get Dragon's Eyes and the occasional epic gem. It's also a good way to use up your Dark Jades and Shadow Crystals.
Speaking of Dark Jades... I don't know if it's just Silver Hand, but uncut Dark Jades have really gone up in price on our AH and I can only assume it's for the creation of Earthsiege Diamonds.

Even with current prices, prospecting saronite is still profitable on most realms. Prospecting titanium generally is not - again differs on each realm. I wrote about how to profit on this, here:

This same thing has been happening on Scarlet Crusade-Alliance, except more with Chalcedonies. What used to be a 1-2g gem now will usually go for between 19 to 25g from day-to-day. This price has been sustained for the past several weeks now, and it does kind-of carry over to the other "cool" colored gems (green/purple). Red/orange/yellow are completely unaffected (80s-1g apiece). I assumed that it had to do with the production of Icy Prism's, but that wouldn't make sense because everyone would could make a prism could also just Prospect super-cheap Saronite Ore for themselves (~16g/stack).
That being said, I have been stockpiling them from prospecting over the last few months, and am strongly considering just doing *massive* undercutting against everyone else just to stabilize the price. I would assume that, if you put enough of them on at one point, the number of purchases would have to be less then the total supply, and given that I could taper the supply long enough to last until the normal suppliers started putting gems on at my price, that should return the price to normal. Against the ToS? Maybe, but its for the greater good...
As for moneymaking with JC, I seem to do decently with just cutting gems for people. Whenever I'm in Dalaran, I just call out "Ren's Jewelry Emporium now open for business. Free cuts, though tips appreciated". Tips don't usually add up to much, but I always tell my customers to add me to their friends list (I get new inventory every 4 days!), and usually return customers tip even more. Of course, if you just want maximum profit, minimum charity, then the AH is a better choice. Just get epic gems via badges, honor, and alchemy transmutes, then cut them for massive profit. When I need extra money, I can usually get around 2-3 epic cuts done per day via this method. At around 200g apiece, that's 600g profit with no direct overhead (besides time).
