First of all the endgame crit immunity threshhold is 5.6% (Raid boss level = player level + 3)
Now more to your point, calculating your chance to be critically hit at any level.
A mob has a 5% chance to critically strike a player of equal level.
For every level the mob is higher than the player it gains an additional 0.2% chance to crit.
For every level the mob is lower than the player it loses 0.2% chance to crit.
You can reduce that chance with defense rating, resilience rating, or talents and due to having 3 different sources of reducing this it's always better to look at the percentage they reduce it by rather than rating.
crit reduction from defense + crit reduction from resil + crit reduction from talents = total crit reduction

This should do the trick
Defense Skill Needed=(5xPL) + (5x(ML-PL)) +125
PL=Player Level
ML=Mob level
This will give you the defense skill needed to be crit immune to a certain level mob.
** Note
This formula does not take into account spells/talents/abilities that reduce your chance to be crit.
