Hit rating and consistancy

I typically follow my spreadsheet on most things. I play with it on a regular basis, seeing how upgrades affect my dps etc. There is one thing that I notice though. I am currently sitting at 359 hit rating. Quite low in the major picture. The spreadsheet shows certain items to give me higher dps, even though I might be losing 70+ hit rating.
I believe the spreadsheet is telling me the truth, because the stats gained are pretty major, but, I fear that my dps won't be consistant. So this poses the question, if a spreadsheet tells you something is an upgrade, but will drop you below 300 hit rating, would you sacrifice the constistant dps for more spikey dps, since the spreadsheet says? This is assuming my question about losing constistancy is correct.
Edited...ths spreadsheet also tells me to continue stacking ArP when I lose the hit rating too, just in case anyone was curious as to what it says to do with gems with the changes.

Upgrades are uprades.
You're still over the poison cap so the value of Hit doesn't change that much.

I am currently over the poison cap, yes, but the upgrades will put me UNDER the poison hit cap though. For instance, I am at 359 hit rating, but if I replace my legs, I will be at 285 hit rating.

The line of logic that insists you have to be hit capped to do dps is wrong.

The discussion had nothing to do with being hit capped to do dps. You can do dps with 0 hit rating. The topic was consistant dps. How much hit rating might affect being able to do 6,000 one time with the same raid buffs, and doing 7,500 dps the next due to hit rating.
