it's rarely a good idea to blindly socket something.
in this case, with the socket bonus, the tradeoff is 6 strength vs 10 crit. although strength is a better stat when comparing equal amounts, you are getting enough extra crit to probably make it worthwhile.

In this case it's not that important, its indeed 20 str vs 14str/10crit, with a DPS spreadsheet it will be like +/- 1 dps dif if you are raid buffed or not. I think the only case where using an inscribed gem is better would be where there's a red and a yellow socket and the bonus would be 6 str. It's a bit off topic, but if you are not hit capped then 10 str 10 hit will be way better than 20 str on a yellow socket.

Usually it is slightly more dps to gem Str/Crit in yellow sockets due to the socket bonus.
At typical gear levels, the SEP of crit is around 0.8-0.9, so think of it this way for a yellow socket with +4 str bonus:
20str: 20*1.0 = 20
OR
10str/10crit: 10*1.0 + 10*0.8 + 4*1.0 (socket bonus) = 22
Often each SEP "point" is around 2 dps, so we're talking a 4 theoretical dps increase.

Ive found that it takes a really crappy socket bonus not to be worth it to gem yellow with str/crit.
