What is the effect of latency in DPS?

Sup people,
I have been wondering how (and how much) does latency affect dps. My mage has a little over 5k GS, and I`m using mods like Quartz cast bar as well. However, I notice that my raid dps (let's take 10 man as a basis) can range from 3.9k up to 10k or so.
Ok, I know there are some fights where the buffs alter the true perception of dps. So, let's take Icehow as an example: single boss, no adds, little moving around (except when you need to escape his rush attack). Also, not gonna take Bloodlust and my CDs into consideration. Average raid composition, and not changing spec and gear.
I've done from 4k up to 5k dps on him. Since I`m in Brazil, and I play with some friends on a server on US-West Coast, my latency is usually from 300 ms to 700 ms. I've noticed that my dps changes a lot, but I really would like to know if there is a way to measure how much my dps suffers vs. increase in latency.
Can anyone help?

As tears said, it's much more likely the difference you see in your own dps is because off missing buffs/debuffs in a 10 player raid. While I don't know the numbers when it comes to mages (I'm still leveling mine), I can tell you that with my rogue main, something as simple as a couple shaman totems can make a 1k+ difference in my dps in a given fight.
It would be very difficult to track how much small latency changes are affecting your dps. It would require constantly monitoring your latency, as well as repeating the same fight multiple times with the exact same raid makeup, while assuring that all buffs and debuffs are up for the exact same amount of time each fight. Then there's the RNG, which given your luck on a particular night, can actually make a fairly big difference in the numbers you see at the end of the fight.
