Fix your gems and enchants, and get your professions sorted (you'll want the JC-only gems), then you can probably go TOTC 10 (normal).
But my advice would be to get a few more easily obtained upgrades, eg.
crafted bracers

Def/sta is a green gem and so matches a yellow socket. Dodge/sta is a violet gem and does not match a yellow socket. You should go for def/sta in yellow
if
the socketing bonus is worth it (6 stamina or more), otherwise it's full stamina.
That's why you use that gem, even though dodge/sta is better stat wise, by using def/sta you also grab a socket bonus which you couldn't have done using a violet gem.
(Also there's no def cap, there's the 540 defense skill when you become uncrittable by raid bosses, but even after tht defense continues to provide benefit)
And also, why did you get 5/5 T9? The off-set pieces purchasable with EoT are much better, you should definitely have bought the helm or the shoulders (or both, 4pT9 being really situational).

Redundant statement is redundant.
Jargon

Who cares it is not the actual cap.

I know it's a jargon term. The way Sploog worded it however made me think he was persuaded 540 was the hard cap for defense.
