So basically, I need to choose a class that deals with as little multitasking as possible, in all scenarios, though I'm primarily concerned with battlegrounds and world PvP, and secondarily concerned with raids and arena.
Problem with that is that most PvP relies on multitasking. But to answer your question, the classes NOT to roll are any pet class... So hunter and warlock are out. As are shaman, as deciding which totems to plop down will differ depending on encounter (at least that's what I've heard).
Paladins and mages are probably your best bet though.

Though I haven't done it at 80, PVE healing seems to me the least multitask-heavy, being "heal stuff" and "move out of fire". DPS have to do the same but instead of healing stuff they kill it, plus interrupts and CC usually fall to DPS since they're the least crucial role otherwise (tank dies, it's a wipe... healer dies, it's a wipe... DPS dies, unless an enrage timer goes off no biggie). Dunno what an actual healer thinks of this though, and, well, Mimiron hardmode.
I'm new to endgame healer, but I find it much more challenging than DPS when your doing something other than facerolling random heroics. Especially when raid healing, your watching 10 - 25 bars go up and down and trying to keep them all up while at the same time trying to coordinate with 4-5 other people doing the same thing so you can all be as mana efficient as possible, and as well as trying to keep up with the mechanics of the fight so you don't die or screw up the raid. (Usually one will lead to the other =P )

Ret IS a faceroll, you can literally bind spells to half your keyboard and roll your face over it in PvE, unfortunately in PvP there's stuns/hands/other spells you need to worry about. For a BG you can probably still faceroll though, not hard in a massive zerg.

I would definitely avoid Hunters, Locks and Rogues. Healing classes are out too.
Depending on your ability to multi task, i'd stay away from mages, because they do have to deal with alot of the running back and forth to things, spellstealing, decursing etc. Despite the 2-3 button rotation.
DPS warriors and feral druids have a very complicated rotation that involves watching the debuffs and buffs of you and your enemy, however they don't have to deal with anything besides dps. Same with Ret Pallys. They don't really have a lot of raid utility which involves multitasking.
I wouldn't suggest tanking mainly because you do have to be aware of your surroundings alot, pulling out of fires, making sure to get that loose mob, etc.

If I was a smartass, I'd say feral druid DPS. JOHN FRAKKIN MADDEN!
Oddly enough, a druid tank (if you're only doing 5 mans) with a boomkin spec (for raid PvE) might be your deal. In 5 man instances, the decision chart for ferals is this:
3+ mobs: Spam swipe, maul if you have extra energy
2 mobs: Maul (with glyph)
1 mob: Lacerate to 5 stacks, maul, maintain 5 stacks of lacerate
(And yes, I'm pretty certain I'm forgetting something here. It's been a while since I did druid tanking, but there was something pretty much that simple.)
You do have to pay attention to the occasional runner, and you need to move mobs out of stupid stuff, but other than that it's pretty faceroll.
Boomkin DPS is really easy. You stand in one place, put dots on mob, spam wrath until eclipse, starfire until eclipse falls off, refresh dots, starfire until eclipse, wrath until eclipse falls off, repeat. Oh, and toss the treants or starfall if you have them. It's not a perfect rotation, but it's pretty single-minded and will get you 90% of the DPS of the OCD. There's even an
addon
that tells you what to cast next.
Pally tanks are the same for 5-mans. Yes, they have a lot of "OH CRAP" buttons, but you can macro the 96969 rotation to a single button, and once you get all the mobs on you nobody is going to take them off of you again unless they do something really stupid. My 2500gs paladin was tanking HHoR with 4.8k gs bladestorming arms warriors, and the mobs just would not come off me. Add in the /faceroll easy DPS spec, and you're good to go.

with a bit of work, you could probably do some complex things with PowerAuras ahead of time and be able to know exactly which key to press at any given time - it'd make the only thinking you'll have to do be is interpret the visual cues and stay out of the bad stuff.
Power Auras is one of the best addons ever created. It's up there with DBM and Omen.
