Keep both pairs; the PvE boots have

more EH and are also better for threat.
PS: After the defense cap, defense is roughly comparable to dodge rating in value.

Take the PvP boots when you need more EH, take the others when you need avoidance. That depends on the encounter; for example, avoidance would probably be preferred on Deathbringer Saurfang.

saurfang is not an avoidance fight, though - unless your tanks are slow to taunt.
the thing is, you get 77 more stam and 186 armor from the boots vs. 141 stats worth of avoidance. unless you have really low health, i would actually go with the tanking boots, as that's a lot to give up.

It is. Avoidance prevents him from stacking blood power/energy - tank taunts has nothing to do with it (though avoidance would also reduce the risk/amount of healing he would get, the proper way to do that is to just get the taunts right instead of trying to gear around it).

He gets blood power every time he hits a tank, gets double blood power every time he hits a tank who has Rune on, gets double blood power every time he hits a tank while a Mark is out, and gets quadruple(?) blood power if he hits a tank while a Mark is out and the tank has a Rune on. If there are two marks out, each melee swing gives 3 blood power. Hopefully you can see how extra avoidance in this fight can make a difference.
Saurfang Melees for up to 9k-10k damage. It's certainly not an EH fight. Avoidance helps mitigate damage done in this fight more than having an extra 5,000 health would. Festergut type fights were you see 18-20k incoming hits are where you want the armor and health. Go ahead and put 2 avoidance trinkets on for Saurfang.

i was watching this the last time we had this discussion. i don't see any BP gains unless he hits a tank with the mark.
if the description you gave is accurate, of course avoidance would help. i'm still of the opinion that he doesn't get BP from a non-marked tank, although i will admit i'm not 100% certain. if i get some time, i'll crawl through the logs so i know for sure.
also, the mark damage does not give him BP at all anymore, so that shouldn't factor into it.

I guess I shouldn't say it so definitively since, in the heat of the moment, it's hard to tell exactly what is going on. Also, the combat logs I have do not show Saurfang's power gains, so it's hard for me to tell exactly when and how he gains his power.
What I can see is this information from our kill last week:
Blood Beasts:
--27 hits, 1 crit.
Saurfang:
--Rune of Blood, 15 hits
--Blood Nova, 11 hits
--Boiling Blood, 197 ticks
--Melee, 56 hits, 68 partial blocks
Then for the Marks:
--Priest, 12 hits (we let him die)
--Druid, 36 hits (we let him die too)
--Paladin, 123 hits (13 immunes when he bubbled)
--DK, 104 hits
The only problem, now, is figuring out how this all adds together.
I'd like to come back to this and look over the logs a bit better. Then again, this might all be futile effort since the fight was changed and hotfixed this past week.
I'll try and keep a closer eye on it.
Regardless, the fact remains that he hits like a wimp, and avoidance is preferable in this fight because we know at least SOME of the time, preventing melee hits on the tank will prevent some additional blood power. Still, the majority of his blood power comes from the Boiling Blood ticks, which are unavoidable except for Disc Priest shields and other Immunity effects.
