I have E bound to PetAttack, and Q bound to PetFollow on my keyboard. Right next to my navigation keys. (W, A, S & D) That handles things very well for me, 98% of the time. If you want to pull your pet off someone, then hit PetFollow. I sometimes hit my PetAttack button, right as I'm spooling up my own Immolate, so that his Fire Bolts will start hitting sooner.
It's also very useful, in PvP and PvE, to retask my pet from one target which it may have been hitting, to some new target. Click on them to make them my target, hit PetAttack, and start pew-pewing.
As soon as they come out with a decent Mac driver for the Razer Naga, I may move these functions to the keypad on the side of that mouse.

MOAR BUTTINZ!
You're right. It's a gizmo. And, it's kinda smaller than I had expected. My Logitech G9x is doing very well, at the present time. (And, until they get those drivers, then the Naga is gathering dust on my desk. My wife has my WoW mouse on her computer nowadays, too)
I may even try to set up the Naga so that I can navigate with the keyboard OR mouse... allowing me to exclusively cast with the left hand, if I want to.

I am evil and backwards, in that I leave the "Stay" command to clicking with my mouse on the petbar. Yes, I know it... I'm lazy. But then, I've only rarely found a use for it. And mostly, in PvP. I'll set up my pet, away from myself, and then camp around some corner, ready to attack. I'll put my pet in Defensive or in Attack mode too. If a Rogue manages to get the drop on me, then my pet will be on them, and help to prevent them from re-stealthing. This is particularly useful with a Felguard. (Which has a stun-attack, when he charges your enemies)
In PvE? I just don't find too many times when I can use the "Stay" command. Especially, PUGing... where, it seems like almost everyone wants to race through the instance as fast as possible. I've used it maybe once, ever. Though I can see the value in setting him up for a big boss fight. Maybe I'll give it a shot, the next time I'm hitting someplace that's a little harder.
