I think we generally dont talk about crit cause there is so much of it on gear. I am running at something like 56% percent unbuffed, which can be nearly 75% fully raid buffed. Basically, if you get high level gear, gem for agility (which also grants crit), gem your yellow sockets with an agility+crit gem, and you never really need to look for crit.
I have noticed one thing though, on the dps spreadsheet, as an SV hunter crit used to be my most important secondary stat. However, there is some kind of crit threshold where you have "enough" of it, as it were, that Armor Pen, and even haste, becomes more important. Also where even with a decent socket bonus, a pure agil gem grants more dps than an agil+crit gem. (though the numbers are like 2-3 dps difference).

PvP has always ben about burst. Doing as much damage in as little time as possible.
PvE gear works best in terms of pure nukage as there's no stat "wastage" on Resilience, and to a lesser extent Stamina.
However PvPing in PvE gear is near suicidal as the lack of "PvP Stats" will mean you'll die very quickly if you're focussed down.
As long as you're not targeted much (Alterac Valley etc) you can pretty much hang back and own the battlefield. In smaller BGs (WSG etc) you really need to trade off burst damage for survivability.
