Questions about dungeoning

Yeah, that's right, I made up a new word. Okay. I'm a newb. I have a level 57 Draenei Hunter that I started about 2 months ago. Lately, I've been having some fun with the Dungeon Finder.
Well, not so much fun, really, because I've ended up getting shafted into groups that don't know what they're doing. The first 5 or 6 times I used the dungeon finder, I had a great tank and a great leader/guide and great healer and thought "Wow, this is really awesome!" We'd complete the dungeon each time and I'd be a happy little camper with my gold, my experience, and my bag o' goodies. Then I'd quest until the next day, and I could do my first dungeon of the day and get another wonderful bag of goodies. The bag of helpful goods is really all I do it for.
But it's been 2 weeks now since I've completed a dungeon, though I've tried very hard. I attempt 3 or 4 dungeons in a day (usually Blackrock Depths, until I got reeeeaaaaaallllllyyyyy sick of it) and not a single team has "completed" the dungeon, so I usually end up getting frustrated and signing off.
So the reason I'm posting is....I'm wondering if there's a specific way you have to do things in order to complete the dungeon by Blizzard's standards to get the gold and bag of goodies. I know each dungeon has multiple bosses. Is there a way to find out which one of them you have to kill to "complete" the dungeon and get what I came for? I spent 3 hours in Dire Maul with a team and I thought the boss we killed would have got me the goodies, but after they all left the party I realized that we still hadn't completed the dungeon. What the heck, WoW?
SO what's the trick? I'm looking up maps now to familiarize myself with the area (Dire Maul) and I'm thinking of maybe leading a group, but I don't want to lead them on a wild goose chase. I want to know exactly how to complete the dungeon; where to go, who to kill, and what quests will get me better gear. Can anyone help? Newbs like me love advice :)

Its the final boss for the stuff. And once oyu head to outlands the groups start getting less fail... but slowly.

The criteria for getting the lootbag is killing a certain boss. The "last" one, as it were.
I've had RFC groups where a Rogue just randomly leaves you fighting the trash, stealthruns up to the Felguard boss, solos him, and everyone gets the bag plus the boss' loot.
Now, DM's divided by wings, so you'll have to kill a certain boss depending on which wing you get. This is the case for many pre-TBC instances, such as BRD (which you said you hated, be glad you don't have to run it for gear) or Maraudon. Maraudon's much more linear than the other two, and it's easy enough to see who the "final" boss is with a simple glance at the Wowhead page. The other two are a considerably larger pain.
My advice? Get a level. After 58 you'll be able to quest in Outland, which will get you to 60 in no time, and from there on every dungeon is ridiculously linear, with less weirdly positioned trash and generally more fun boss fights that actually feel like boss fights instead of just pulling a whole room, AoEing it down, looting a blue and going "lol I just noticed this dwarf was bigger than the other dwarves". Even if you don't like questing, try doing it just until you can queue up for Outland instances and you'll see it's much, much better.
But yeah, don't expect players to improve with level.

The end Vanilla dungeons (Dire Maul, BRD, BRS, etc) are very rarely fully completed, because they're long and because you're in the dead spot right before Outland.
Like Funden said, it's the final boss that gets you the Satchel. However, with BRD, if you get Upper City, you have to kill the Emperor
AND
keep the Princess alive. There's a bug where if she dies no one will get the satchel.
And once oyu head to outlands the groups start getting less fail... but slowly.

PS: Thanks for the help, guys :) Outland sounds like a pretty awesome place. I'm about halfway to level 58 and getting pretty excited! I can't wait for the groups to be "less fail" lol.

The rate of failure isn't level based, it's luck based. Sometimes you get bads, sometimes you don't.
Is there a specific site I can go to and find out who the final boss for each dungeon is? Or is it a secret?
Wowhead's list of bosses on a dungeon page usually has them in order, but since high end pre-TBC dungeons are highly non-linear it's not always accurate. Should be fine for anything from Outland onwards though.

Yes! especially once I buy flying for my DK I'm not tempted to delete him.
