This is the gear i was using as a Shockadin.
*sweatdrop*
I suggest getting the craftable tanking gear to start off with, and don't enter heroics for a while...

Gtankbr, I agree with Tomas, and would it kill you to use blue quality gems?
if gemmed/enchanted properly
Armor: # 12.6k
HP: # 11.1k
Defense: # 430
Avoidance: # 40.23
and I assumed +10 stam on head, gloves, shoulders, boots and chest

Eh, the shoulders are fine for now. You should get a new chest, wrists, shield, libram, and boots maybe. Boots aren't too bad tho.

(for ease and better armor, stam, spell damage you can save space for something else elsewhere)

These being fairly easily aquired. You can probably get a good group and grind all these out in a day or so. You might be ready for heroics at that point. But make sure your def is up to uncrittable.

To name a few for trinkets. =)
I'm not as good at stat adding as blade, so I don't know how much def this will put you at.... These may be overkill. =)
Just a side note. If you can get 490 def, don't be afraid to throw some pvp gear in. The pvp gear is very high on stam and armor count. I was in group with a pali tank that was using 3 pieces of merciless in heroic, and it was a cake walk.

Lightrain, for a beginning paladin tank, it should be fairly advised that PvP pieces are bad choices
just because they don't have avoidance, reaching uncrushable is pretty neat if you catch my drift ;)

Go go Gift of the Naaru ;)
Okay, yeah, it isn't much, but I've found it helpful on occasion.

Agreed blade, as I said, if you have 490 def. I guess I wasn't clear on my wording. If you get 490 def and have an extra piece of armor or 2 to fill, you can can throw in a piece or 2 of glad gear. That's not shameful, but you may get knocked by PVE masters. hehe.
Hehe, I was trying to pick non heroic gear. Thanks blade. =)
Thanks for the info tomas. I was thinking that wouldn't be a bad buffer to combo with a holy shield/rebout proc/autoblocker to hit quite a few blocks in a row on a boss. But ya, seems pretty situational... I couldn't find any pre heroic, easy to attain lvl 70 +stam trinkets. I did look. Let me know if you find one. =)
