Is it just me who thinks Blizzard should stop handing out every single class to any possible race?

In all seriousness, though Goblins technically do not agree with the idea of Shamanism, this situation isn't without precedence. Blood Knights -- in (original) lore were technically not paladins. However, they forced and bent the powers of the light to their will. In-game, they are Paladins for mechanic and balance reasons. Similarly to the situation with Undead as Priests or Tauren as Paladins -- they are unique lorewise, but are assigned the class as-is for balance/mechanic reasons.
The Goblin totems are mechanical, so it wouldn't be a stretch to assume that they are using machines to control the elements, while not literally being shamans. They were just assigned the class as a mechanic.
Yes I know Blood Elf paladins are now, in lore, true Paladins. I'm referring to their state pre-2.4.

They're using similar concepts for some of the new combos as well... other than what I already said on the last page about the goblin shamans.
Gnomes are
field medics
, Tauren priests and pallies are Sunwalkers, who worship their own sun deity rather than the holy light. Their paladins are lorewise more comparable to shamans or druids than actual paladins.
And really, the races have always had different "orders" that their classes belong to. Rogues for instance... SI:7, Deathstalkers, Shattered Hand etc, so this isn't really anything too game-breakingly new. :-p

IMHO it adds a little to the realism. Even if takes a little from the lore I think the races having wider choices for classes gives a sense that your toon really has a choice of what path they want to walk. Who they want to be.

I think Undead Paladins is possible. The way I see it is that you don't need to be mortal in the struggle against the "evil" forces of Azeroth. I think the Ashen Verdict is the first step to Undead Paladins. Former servants of the Lich King helping to down the Lich King... and achieving that goal as well? I think that warrants an "evolution" for the Forsaken as well.. the way I see it.. what BETTER option for Paladins. To no only HUNT the dead, but be Undead too. I honestly don't think it's a stretch in terms of lore considering The Ashen Verdict exists.They'd still kill themselves with the first Holy Spell they cast, as again, the Paladin spells are designed to destroy the undead. The Verdict is also made up of members of the Argent Crusade and the Ebon Blade; the living and the dead(because you do realize that every member of the Ebon Blade is already dead... right?).

Hunters
No - Draenei, Blood Elf, Goblin, Undead
Every race should be hunters, as every race needs to hunt animals to eat and survive. Also, blood elves have the Farstriders organization, and every army has some sort of archer unit. And undead were humans, so they would have retained their training.
Mage
No - Dwarf, Night Elf, Worgen, Orc
Night elves were the first mages on Azeroth, worgen are just cursed humans, orcs used warlock magic which isn't THAT far from arcane magic, and dwarven mages are basically dark irons.
Paladin
Yes - Undead
No - Tauren
Tauren aren't paladins lorewise, they're sunwalkers, and get their power from the sun. Basically the opposite of tauren druids. And undead? Yeah, okay, if you don't mind having your toon disintegrate when you first cast a heal.
Priest
No - Gnome, Worgen, Goblin, Tauren
All races have some sort of religion, so really all races should have a priest. Worgen are cursed humans, Tauren have sunwalkers (so again, priests get their power from the sun.
Rogue
No - Dwarf, Orc
Shattered Hand clan means nothing to you? And every race that doesn't have hooves can be rogues, they're just sneaky people (also, see satyrs, they have hooves and have rogues).
Shaman
Yes - Night Elf, Worgen
No - Dwarf, Goblin
Okay... Shamanism =/= Druidism. They worship two different aspects of nature. Wildhammer dwarves are shaman, goblins probably learned it from orcs.
Warlock
Yes - Draenei
No - Dwarf, Troll
Dwarf warlocks are dark irons, troll warlocks can be from voodoo, and Zalazane is/was a warlock.
/facepalm on draenei warlocks... Those are eredar, they're pure evil.
Warrior
No - Draenei, Gnome, Blood Elf, Goblin
Ummm... Everyone can swing a sword/axe/hammer. And draenei are the most logical to be a warrior, they're bigger than humans after all.
Death Knight
No - Night Elf, Blood Elf (sorry you can't be evil incarnate and Legolas at the same time)
Lich King raised all races as DKs.
It's pretty clear that this troll is thinking about game mechanics ONLY, and disregards any lore whatsoever.

There are very few race/class combinations that I genuinely believe are against lore, and those could more than likely be justified on Blizzards end with some storytelling.
For instance, they said point blank in a blue post that not all races can be Death Knights in lore. However, they also said that they will not deny the class for gameplay reasons.
As far as some of these others...
Tauren Paladin and Priests make perfect sense. They are only being called Paladin and Priest for gameplay mechanics, in reality they are NOT Paladins or Priests, they are Sunwalkers (not sure if priest is called something else or not). They are simply the sun half of the Tauren beliefs while the druids are the moon half. Nothing more, nothing less. If it wasn't for gameplay mechanics they would more accurately have been represented as druids whose spells all do holy damage instead of arcane.
Goblin Shaman are actually hilarious, Goblins are basically paying the elementals to work with them. Elementals are greedy, they want things, and Goblins are providing. I have no idea what the payment arrangement is but the whole idea is very Goblin.
Gnome priests, from what I understand, basically just saw their god. I could be wrong, I don't follow gnome lore...at all. But if that is the case I think seeing your god would make you a little religious.
Dwarf Warlocks, Mages, and Shaman already exist. Warlocks and mages are with the Dark Iron, and the Shaman were Wildhammer. The fact they now have a truce (of sorts) with the dwarves basically means those classes will become more mainstream, and so they are now available to dwarf players.
Undead Paladin is a huge leap of faith here. There may be, just may be, a single one that I can think of off the top of my head (can't remember his name though, feel free to supply it). Remember, Blizzard has stated that even if a race/class combo exists, unless it is common it will not be available to players. So even if there is a forsaken paladin, if there is only one, it is most certainly not commonly enough represented in the forsaken race to allow players to have them running around all over the place.
Draenei warlocks...your kidding right? The only place they are common is with the burning legion. If you want to play one of these Blizzard is going to have to do some serious reworking of lore. Not that they haven't before mind you.
Night elf mages are easy. They already exist, they are just coming home.
I have no real opinion on warriors or hunters honestly. I can see all races having access to them both eventually. Gnome warriors and hunters kinda makes me laugh, but that's about it.
As for rogues, as far as I'm concerned any non-cloven race should be able to be one.
