"Eating the trap" is in a 3v3 scenario when a Healer gets CC'd and thus is immobile so the hunter lays or shoots a trap down onto him, if a DPS gets on top of the trap in the about 2 second arming time it will have a 50% of hitting the DPS or the healer. If it hits the healer it's a dangerous CC chain that they will probably be forced to use a trinket on, meanwhile if it hits the DPS he can simply be dispelled and it is 'wasted' as it does nothing for their pressure or peeling.

Honestly, I fail to see the difference in our explanations.
- A dps is intentionally trying to trap themselves to avoid the healer being trapped.
- The dps is removed from the trap quickly.
- The trap's cooldown is wasted.
You mention a specific scenario, namely 3v3, but the technique is used in battlegrounds, especially rated ones where the team is more coordinated than a normal pug. Since the OP didn't specify the type of PvP videos s/he was watching, I didn't narrow the explanation to arena.
You also note that it is commonly applied after a CC has been used to immobilize the healer, which is significant in the small arena groups but not necessary in larger battlegrounds.
In any event, the tactic is the same. Cause the trap to go off on a dps player & remove it quickly to avoid it trapping a healer and having a significantly greater impact on the team.

- A trap that forces a trinket is not a wasted trap.
- You said they intentionally trap themselves, which is correct, but you fail to mention it's only worth doing if it would otherwise trap a healer.
- If there is no prior immobilization CC, there is no reason to eat it as the trap was entirely avoidable by the healer in the first place.
- It is less used in Battleground situations due to the fact that the healers are far more likely to have DoTs up on them which would break the trap instantly.
Another thing to note is that even without a dispeller it's possible to eat a trap and remove it instantly, for example an Unholy Death Knight with Unholy Frenzy up can run into one and then the damage done by the Frenzy will break him or her out.
