Yep.
Though not on an OCD scale, I'm pretty perfectionist when gaming. Its why I think Transmogrification is the most awesome god-sent feature ever added. Nothing crisps my nerves more than wearing a pastiche of mismatched pieces of armor that wouldn't fit together even if you welded them together.
You'd be amazed at how long I've spent creating new sets to wear weekly, either by combining pieces of different sets, or by creating new sets by using pieces that have a common color motif.
Same goes for my playstyle. If healing, I absolutely hate seeing any friendly bar not at max. Even though I know my main job is to keep the tank alive, and only heal the DPS if and only if they are in any inherent danger, I always try to top them off cuz I just can't stand not seeing those bars full.
As for your little choice, I can tell you it is quite possible to heal your way to 85, and personally I'd recommend a priest for the job. They are MACHINES when it comes to pvp, specially disc.

I find I always waste time on really trivial things cos I'm a perfectionist.
Like I really wanna get the skin tone correct on my character and I find that its really hard to see from the character selection screen. For instance I had an orc warrior which I wanted to play with some guys from uni at the time (although it turned out to be a bit of a waste) but I didn't get the skin tone quite right, didn't really like the lighter green.
My brother is like this. He doesn't play much anymore, but he got me into the game initially and we'd roll alts together. And then he'd not like his imp's name, or his Belf's facial hair, or something else, and he'd "be right back". The imp was the worst, because it could take an hour or more to get a decent name, and heaven help us if he didn't like his voidwalker's name at level 10. >.< So I spent a lot of time hanging out with the starting NPCs and waiting for him to log back in so I could make fun of his imp's name or his fondness for Blood Elves. But it was still fun, and I really miss the time we spent doing that.
So be as OCD as you like! If it makes the game fun for you, that's what matters. (c:

I'd class myself as one, I also fuss over trivial visual aesthetics, more so now that we can transmogrify!
I decided a while ago I wanted to play a healing class too and ended up landing on a paladin and haven't turned back since, it is a really fun class to play, and you always have the ability to switch to DPS or tanking again if you want.

Yes, without question I always think I need improvement.
1. I want to heal. Thinking pally maybe priest. Used to tank on my warrior, loved it, but I don't want the responsibiltity anymore but I thinking healing would be a great change of pace.
2. I want gold to flow more - so I'm thinking mining/herbing as I'm sunk a lot of time into crafting before with really no reward (leave that to the hardcores)
3. I want to level efficiently - but I'm not a fan of questing to much, so is it viable for me to heal my way to 85?
I would probably say Priest because if you get bored of the typical healing playstyle, you can heal like a damage dealer as Disc.
That seems okay, but expect to do a lot of exploration just to generate some profit (maybe something for downtime between dungeons/PvP). I would almost say a profession like Tailoring is viable as well (since chances are you'll end up doing dungeons to level up, and they're usually an excellent source of cloth).
Inevitably, you'll want to quest until about 14 or 15. By this point you can do battlegrounds or dungeons. Given how ridiculously strong Priest shields are even without heirlooms, either path is fine (although I think PvP would be more exciting, but that's just me. Make sure you're doing something while waiting for queues. At 20, Archaeology is a perfectly viable way (and digsites only show up in zones within your level range too).

I've deleted more level 85 toons than I care to admit because they didn't have good professions or something so yes, I'd say I was a perfectionist in that sense.

I'd rather just pay up the gold/money for changing professions/the appearance of the character than level another one :P
Speaking of which, in the vein of this thread, when I changed my BE mage into a
goblin named Zhardyn
for Cataclysm levelling, I mistyped the new name as "Zhdardyn" - more or less acceptable goblin-weird name anyway, but of course I paid extra for a name change >_< Turned out to be my least-played alt in this expansion, huh (and still one of the most time-intensive ones apart from my main to get a transmog set for)

You realize that you can change professions right? No need to delete a toon for that reason alone.
I know, lol.
Every time, this goes though my head:
It's ok, start a new one. We can level it properly. We can level it with fishing, cooking, two good professions. We can make lots of gold this time. We can have 4000JP and 4000HP when we hit the level cap and this will be our new main!

Haha nooooo that's not what I mean. I'm talking getting to level 85 without two professions, not having enough gear to get into raids because I spent my JP on heirlooms etc.
