Read your quests, go to Wowpedia, read the books both in game and out game, and you'll learn the lore.

You are playing an MMO, not an RPG.
Edit: Also, even if the quest involves picking up poop, it's still relevant to the zone.

There is the occasional tottally random quest. Like the girl in Hillsbrad trying to save the baby deer.
But seriously, the game itself is not the greatest source of lore. Pre-cata, there was a lot of lore you could understand from quests and the zone and such. But Blizzard is catering to the people that want to level to max, raid, and get phat loots.
The Warcraft RTS games, Wowpedia, the Book series, and right here in out own little corner of the WoW community are far better sources of lore knowledge.
As an example: I had an 80 DK, and a 70 Warrior when I started RPing here. I learned incredible amounts about the lore just from my first few attempts at RP, and making characters of various races forced me to learn much more about them than I knew before.
The Worgen, the Forsaken(Undead), the Humans, and the Orcs, from my experiance post-cata, all have some pretty good lore-heavy earlier zones.
