two ways:
1. like you already said locking your exp on 80
2. dnt have cataclysm on your account, that way your instantly capped at 80
no more, no less.

As long as you don't ding 81, there's nothing keeping you from doing the level 80 stuff at level 80. IIRC, many of the WotLK dungeons that were designed for 80s stayed in my LFG menu until I dinged 82, but it's been a while.
