As we all know, for about the first week after an expansion drops, 95% of addons are useless due to slow update times. I personally have set a goal to be realm first shaman, and cant decide what to do about my UI. I use a heavily modified UI that pretty much gets rid of all the junk and clutter and just has a few bars, mini-map, and target/party frames. The issue I am running into is I have played with this so long, that going back to the Blizzard standard frames makes me shutter.
What do you guys do in this situation? Should I just go ahead about 2 weeks prior to the release and disable all my addons to get used to the stock UI again, or pray that the core addons I use like Sexymap, Dominos, and xperl get updated on Release day?

Find a UI replacement that already has a working version on the beta. Try nUI, tukui, ElvUI, LUI, or any others that completely overhaul the default interface. Personally, I use ElvUI and I'm pretty sure it's close to a full, working version.

I don't like any of the premade UIs. They either don't have all the functionality I want or have to much clutter.

Have you tried tukui or ElvUI? They're the only two I'll use because their authors are always on top of updates and each is highly configurable. As for functionality, what are you looking for? I don't mind a bulleted list either.

From everything I've seen regarding API changes, the biggest changes are in the unit frames and it should be fairly easy to have everything ready to go for patch 5.0. I might expect some UF add-ons (Vuhdo, Grid, STUF, Pitbull, Clique, etc.) to lag behind the curve, but I'm actually not expecting too many problems at launch.

I guess it comes down to what I am used to. I run about 32 add-ons at the moment that give me the ability to move everything, customize everything from bars to bags to health bars. I've looked at some of the UI packs, but they all seem to lack one thing or another that made me go to individual add-ons and make my own "pack" for lack of something better to call it. I've included a list of all the add-ons I use to give you an idea. I guess it really boils down to not liking or wanting to learn a new set of commands to do what I've been using for ages.

I just had a look at my screenshot stack, there was one where I was level 83 so that can't have been taken more than 2-3 days after Cata launch. From what I can see my UI didn't look significantly different from my end of Wrath UI. So in my case, the more important addons seem to be working fine.
As for slow update time, unless the addon's author stopped playing WoW altogether, I found that most addons that work for Mist Beta should work for Mist when it comes live? Even so, fan updates should be available very quickly as a patchwork fix to a problem (Archy comes to mind here.)

Enough - and good - addons are already MoP ready, or nearly. Since most authors have beta access and you can look at Curse or WoWInterface beta section which AddOns are already working.
About the UI thing, mine is already working (96% or so) for MoP.
