Addons are only as good as how you use them. Ditto for macros (which shouldn't be underestimated).
Grid and VuhDo are both raid frames, of very similar appearance. You use one or the other, not both. Not sure what you mean with Pearl unless you mean X-Perl which is another unitframe addon (never tried it because I greatly dislike how it looks).
Until you see the inside of a raid it's a tad pointless to use a raidframe unless you mean to replace your party frames permanently with the 5man view of the raid frames (I've done this but then again I've also raided with Grid for many years).
I'd be happy to share recommendations on addons but you'll have to be more specific in what you're after - there's no "secret" to any addon that will make you better than what improved information presentation will get you. If you do get Grid, look up the plugins GridStatusRaidDebuff and GridStatusRaidIcons and you'll be saved some manual tweaking (which you should learn how to anyway if you intend to raid seriously with the priest somewhere down the line).
There's not a whole lot of priest specific addons so you might want to have this moved to the
UI & Macros
forum, I'll leave that up to you though. The only priest specific addon I can think of is Ingela's Rapture Tracker and that's only useful to disc priests.

I personally use Clique and Grid because i've been using it forever, however... I would probably recommend Vuhdo as you can customize to your hearts content. I don't know if it's true, but i've read/heard that most of the top healers prefer Vuhdo. Setting it up to your liking can be a pain the first time, but spend an hour or two with it and you'll be fine. If your like me you'll start using it even at low levels so you'll be comfortable when you get to 85. Check out wowinterface.com and look up Affiniti's UI (the disc priest from Blood Legion) and I believe that addon pack include's aff's power aura settings and vuhdo settings... maybe that can give you an idea of how a pro player has things set up :)

You can customise Grid as much as you can VuhDo as far as I know, but my vague impression from trying VuhDo for one short session several years ago and on and off idle discussion about UI with people who use VuhDo is that they've found it easier to set up. Grid is a bit "codey" in configuration.
The only thing you really need a raidframe to do when playing in a topguild is allow you to add buffs and debuffs to it since unless you're in one of the guilds that write and maintain their own bossmods (rarer these days than it was especially with DBM getting better at writing up fights from beta) you will, or at least you used to, play encounters before there are widely accepted strategies and boss mods updated to track to match and may need to make sure you'll able to track things yourself. Top healers preferring one or the other sounds like a myth.
Irrelevant to the OP anyhow, pick whichever one strikes your fancy or try both before settling. Main thing is that you're happy with it and it does what you want it to.

You don't really need many addons early on until you get to endgame raids when you'll probably want to get Grid.
My favourite addon for healing (but it's not strictly for healing) is Clique. You can assign your mouse buttons (including keyboard combos such as Shift-Left Click, or Ctrl-Thumb Click, etc.) to any spell or ability in your spellbook. Your heals become faster because you're just mousing over unit frames and hitting a mouse button to perform your spells while your other hand is free to use the navigation keys.
To make the unitframes bigger/more visible, and to clean up my UI, I use Shadowed Unitframes. It makes them easier to see, click on, and I have it set up so health bars are green by default but turn red on aggro. Makes it easier to see who will need a PW:S or to start casting a Flash Heal.
