It's never too late. Just work to max lvl and youll be able to make some gold. However, sometimes professions aren't as much profitable as they should be. For instance, tailoring is expensive, which can be (in some realms) a risk to get involved, but if ppl are willing to pay for it, then you can make quite amount of gold.
I think some ppl here can explain this stuff better than me.

You didn't say what professions you have, but I assume those are gathering ones, i.e. Herbalism/Mining/Skinning. If that's the case you should go to zones appropriate to your current profession level. Check

Check out the
profession guides
here on Wowhead for strategies on how to level the professions you have. You'll want to look at the "Quick Rising..." guides in particular. Gathering professions are pretty easy to level; just head back to the appropriate zones & start gathering! Crafting professions are a bit harder to level, as they require materials acquired by gathering professions, so you'll have to either purchase the materials or gather them yourself.

What I would do if you have gathering professions is wait till you hit lvl60 and can fly - then go back and lvl your professions - much faster to catch up when you can fly

Having done it the hard way I can definitely say that attempting to level crafting professions as you are leveling your first character is very difficult and frustrating.
Most guides (there are plenty out there) will tell you to choose two gathering professions (mining, herbalism, skinning) which can make you money instead of bleeding it out of you, and then switch to crafting for alts or your main when you are high level and have $$ coming in. This is sound advice. It is immensely easier to gather items with flying skill and a higher level character to solo dungeons and large packs and buy materials from AH.
If you are talking about catching up on secondary skills (cooking, first aid, fishing) those are not necessary so forget 'em if you want. A high level character can farm cloth very easily in the righ dungeons for first aid. Cooking can be power-leveled extremely fast during Thanksgiving special events.
NONE of the professions are mandatory if you don't want to deal with them. One of my guildies power-leveled (with full heirlooms) all the way from 0-85 in about 2 weeks and went straight into 5-man heroics and LFR with all professions at zero - he had no issues. The stat bonuses are nice but not necessary.

Just my 2-cents, but I agree w/ Wombat62. If you are that close to 60, wait until you can fly. It will make any gathering much easier.
Plus, better still is on Tuesday (8/28), we will get the AoE looting, making low-level dungeon farming that much easier and faster to get old mats.

Before WotLK you could level a profession with a very reasonable amount of mat farming*
and be making things that were appropriate to your characters level. In fact three of the
professions could be done with minimal farming; JC, Enchanting, and Alchemy.
LK wrecked that by increasing base leveling rates by (iirc) 30%. If this was not your first
character and you were willing to grind a bit you could add heirlooms that increased
experience gained by another 10-15%. And then they allowed flying at level 60 in Outlands
and Northrend after you did it the hard way one time. Cata has piled on by adding even more
heirlooms that increase experience gained by another 10-15% and a guild perk that increased
experience gained by another 10%. By now its pretty close to ridiculously fast.
At one point during LK Blizz finally acknowledged that the faster leveling was making it
very hard for people to afford any mount past the first ground one. They lowered the prices
of the fast ground mount and the first flyer by a lot and lowered the level requirement by
20 levels. But they have never acknowledged or done anything about about fixing crafting
requirements.
*Not Blacksmithing. Never Blacksmithing. Blacksmithing was never even close to reasonable.
