A quick list of primary professions that complement each other:
G : gathering profession
C : crafting profession
1. Mining (G), Blacksmithing (C) (uses ore/bars)
2. Mining (G), Engineering (C) (uses ore/bars)
3. Mining (G), Jewelcrafting (C) (uses ore)
4. Herbalism (G), Alchemy (C) (uses herbs)
5. Herbalism (G), Inscription (C) (uses inks produced by milling herbs)
6. Skinning (G), Leatherworking (C) (uses skins/hides)
7. Tailoring (C), Enchanting (C) (levelling recipes provide disenchanting fodder)
8. Leatherworking (C), Enchanting (C) (levelling recipes provide disenchanting fodder)
9. Blacksmithing (C), Enchanting (C) (levelling recipes provide disenchanting fodder)
10. Jewelcrafting (C), Enchanting (C) (JC produces rings/necks that provide disenchanting fodder)
11. Jewelcrafting (C), Alchemy (C) (JC produces green gems via prospecting that can be transmuted into more useful gems or into metagems)
The last two combos are part of the JC shuffle, wherein you take ore, and prospect it into green gems. The green gems, depending on what they are, can either be used for transmuting into blue gems or metagems or creating greens/blues for disenchanting.

JC Shuffle is not that good anymore. Now you need a Golden Lotus to make uncommon gem into a rare one. And only rares can be trasmuted into meta gems. And you need 6 of them for a single primal diamond.
So uncommon gems seems to be useless junk in MoP.

The ore shuffle has been quite lucrative for me when ore prices are down. I've been auctioning the uncut rare gems and crafting bands and necklaces with the uncommon ones. I disenchant the uncommon jewelry and post the rare ones. I do not cut the gems because the market is larger for the uncut ones, i.e. discovering more patterns for JCs. The enchanting mats are also selling well on my server.

Want to focus the most on just continously leveling your character fast. Or you like gold. I would like to recommend going double gathering.
I'm not sure how gathering experience scales in MoP as you level, but the time you spend gathering instead of killing or moving is a HUGE waste. You'll level much faster w/o time spent gathering holding you back. Besides, you don't need the gold; it's chump change, a distraction.
Furthermore, the gold you get for gathered materials today will be less than those same materials will cost you in the future (inflation), so I recommend picking at least one of your endgame crafting professions from the start. Keep an eye out for good deals on the AH when you're there and chip away at your profession during downtime... because there is ALWAYS downtime, even if you just need a break from the treadmill. The important rule (if you mean to level fast) is to never become consumed by your professions until endgame.

I don't know if double gathering is dead but I am sure that it is greatly diminished. Between the products available from your farm once you are revered with the Tillers and that there are ore and herb nodes all over the place in Pandaria MoP mats are really cheap. Then with the great wave of Monks having passed I don't think lower level mats are going to be as profitable either. Of course YMMV.

Personally, that post is not that great.
My main is Enchanting / Engineering. Why ? Because I find Engineering to be the most fun and cool profession out there. There's also not many of them out there so if the Hunter of the guild need scope, I can make them. In the other expension I was the one doing the arrow/bullet.
I took Enchanting as second profession because I started Mining/Eng then once my Eng was maxed I just switched to enchanting because it's the easiest profession to level up since you can just run old dungeon and DE everything.
On my alt, I just take mining then mine everything for BS/Eng or JC/Eng.
You're trying to answer all "Which profession do I take" questions, but you only put Engineering with mining, that's not really accurate or anything.
If you really want to answer that question, the only solution is to highlight what the profession bring and what unique stuff you can do with it and what raid buff it gives you. Then it's all a matter of preference, You could go Mining/herb too (which you didn't provide) if someone enjoy just gathering and make tons of money, they still give buff for raid.

There is one other aspect that bears mentioning. Some professions work better with some races or classes. For example Druids are so superior at Herbing that one Druid in flight form is the equal of multiple toons on other flyers. Another case is the two new BC races which are superior JC's. I also seem to remember that Engineer Rogues at one time were a preferred raiding setup.
Second, if you are an altoholic like me its a good idea to make your armor crafters the the easiest characters to level. This is one I screwed up on. For example my Warlock is my Alchemist and my Mage is a Tailor/Enchanter. It would better the other way around. Warlock pets such as the Void Walker and Felguard can act as a Tank and that makes it somewhat easier to level them. Similarly my Blood DK is my Engineer when it would better if it were my Black Smith.

You covered which professions match together. But all this information may not answer, "which professions do I take?" My game isn't active right now, so I'm not going to fill in the blanks. But you should add which professions give you what in return.. Jc'ers get their own epic gems, Mining gives you a stam buff, inscriptioners can make bigger shoulder enchants (bop.) I'm a pvp'er, grinder, role play, or an achiever. Lets say I like to only pvp with some minor leveling. Which professions should I take?

Hmm yes and No.
Some Uncommon Gems make 450 IL Rings/Necks (not just the rare gems) which make good starter items or good Eternal Shard makers. The Other Rings/necks are good for Enchant Mats or can be cut for a chance to give you the perfect cut which equalls the same stats as the Rare Gem.
I for the most part when prospecting my own ore. Cut or X-mute Uncommon Gems (X-mute when I need more Meta's) Into Cuts that I know sell. And use the Rare Orange,Green,Purple for Meta's. Red goes for Scopes (my Jc happens to be a Eng) And Yellow and Blue get cut into Cuts that sell, Like Crit or Haste and Hit and Spirit.

Except a level 20 alt could level mining far enough to make bronze bars in about 30 minutes. Don't let that hold you back. Also lvl58 DKs make good gatherers if you don't already have one.
