1. No, its trivial to get exalted with home cities now. Do quests for them and wear
Darkspear Tabard
when you run instances.
2. If you are intent on getting Darkspear rep as quickly as possible, you'll want to walk over to the Echo Isles to quest from 1-5 instead of doing so in the Valley of Trials. After that, questing in Durotar and then dungeon grinding with the aforementioned tabard will be your best option AFAIK.
3. Coordinates aren't needed so much anymore as the in game quest interface shows you where to go on the map. For non-raiding characters, no mods are really required.
4. That is correct, if you only have WotLK. If you have Cata or MoP,
Swift Zulian Panther
is a 1% drop chance off
High Priestess Kilnara
in the redone
Zul'Gurub
.
5. Nothing sucks. In MoP every spec is pretty balanced. Play what you like.

All this^
Although for #3, I highly recommend ArcHUD3, it shows your health/mana (or rage/energy/runic power if you're a class that uses them) as well as those of your target in arcs around your character that allow you to keep your eyes on the action.
Easily downloadable from
Curse
.

I was taking a look and I have another question, considering that I am most interested in Shaman or warlock, do shields suck for Shaman? Ive been reading they should only dual weild, hmmm.
And considering that you mentioned the Tabard, where would I go about getting it?
Don't know much about Shamans, but as far as I know Elemental and Resto use a one handed weapon in combination with a shield, whereas Enhancement Shamans dual wield one handers. The shield really just serves as a stats boost for Shamans, and doesn't really provide any actual benefit like it does for Warriors or Paladins.
You can purchase the tabard from
Champion Uru'zin
in Orgrimmar, next to the flight master.
