Simple answer: Don't sweat the dummy DPS. Especially as a tank. It's not your role to do DPS.
Go in dungeons and see, how you are going. If you have any issues - fix them, or ask for advice. But likely you won't have any.

Your job as a tank is to
Hold Aggro
and
Try to die
.
Not to DPS
.
Dk's and Bears do some crazy damage as tanks. IF your going to compare your tank damage with that of another class compare it to a Warrior not a dk.
As far as I have seen your not going to have worry about other dps pulling threat off you unless there well overgeared and are poping cd's. IF that the case use your Taunt, Hand of Sac. and if needs be Hand of Proc. (be prepared to get yalled at if you use this)

As prot you want to use Seal of Insight for both single target and multi target situations. The healing done is more threat done.
SoT should be the conscious choice when you actively want to increase dps on a single target, but SoI should be your default.
