the gargoyle is more like a damage over time spell than a 'pet' or 'summon'.
Basically, it's a 5 minute cooldown, 1 minute duration. You target an enemy, cast the spell, and the gargoyle flies out and starts casting shadow spells at the target. You cant give it a new target (I assume) after the main target dies, chances are the gargoyle just flies off after it's intended target is dead. The gargoyle wont be controllable and wont have a pet bar, but it will probably be targetable/killable by enemies.
From the looks of it, the primary 'pet' Death Knights will have with them is a ghoul. Initial info says that you can summon a ghoul from any corpse (non-humanoid corpses require corpse dust to use the spell), and the spell has a 5 minute cooldown while the ghoul lasts 2 minutes. The ghoul has a wide array of abilities:
-It can disease it's target
-It can 'gnaw a limb' off the target, stunning it for 3 seconds
-It can be told to 'explode', dealing damage to everything around it
And a couple others I cant remember off the top of my head, I dont have the site with the info bookmarked yet either =(
So, to me it seems like you can only summon one ghoul at a time but it will have a pet bar and be more powerful/useful than most summons (aka shadowfiends, treants, water elementals, etc).
With talents, raise dead's cooldown can be lowered to 2.5 minutes, while the duration of the summoned ghoul can be increased to 3.5 minutes, effectively allowing you to have a ghoul active at all times as long as corpses are around for raising. You can also use death pact to sacrafice a ghoul and heal yourself, or death coil to heal the ghouls you have summoned.

looks like the abilities ghouls have are:
-huddle (defensive crouch that reduces damage taken)
-leap (teleports the ghoul behind the target)
-claw (does damage)
-thrash (does damage and silences)
-explode (does aoe damage, kills the ghoul)
-infect (diseases the target)
-Gnaw (does damage and stuns target)
It also looks like ghouls will operate off of an energy system like rogues and hunter pets do, and with these abilities that means they'll have a pet bar and be fully controllable.

The ghouls you 'summon' don't work like this atm. But I'm guessing they will eventually...That's all I should I really say.
that info was leaked from alpha.
Originally, ghouls did not have pet bars and only had a chance on hit to apply diseases to the enemy. That was because, through talents, you could summon up to two ghouls at a time - and using a petbar to manage two pets isnt possible.
The talents that allowed such have been removed in the latest version of alpha testing, and now the only way to get a ghoul is by using raise dead - the player is now limited to one ghoul active at a time, and they were given a pet bar and the above listed abilities to allow more versatility/power to the pet.
