So, which talent tree are you going to pick?

i want to do blood all the way until i get into a guild that needs me to do tanking, i dont want to but if they ask me i'll switch. but i'd like to try each tree out once.
You can tank with all 3 trees. Blood is probably be a very viable tanking tree like Frost. You just have to pick the tanking talents in Blood ;)

A build for you. Its focus lies on parry via strength and high threat. The build's best use is tanking melee mobs dealing not to much damage with one blow. In emergency cases you can change to a Lich ;)
Your typical tank cycle should be 1 Plague Strike and 4 Blood Strike to be without Runes to obtain the bonus. Use Death Coil whenever its possible. If you just want to deal damage switch to Blood Aura to get the lesser threat benefit. Not the best tanking build but I think a nice 5-man build and viable for raid's offtank issues.
/edit2: You might think "WTF??? I need a Frost Rune to get in Frost Presence!". There seems to be an ability what changes a Blood Rune and 10% health into a Death Rune making it able to switch to Frost Presence if you want to. The ability seems to have a 3min CD though. But with it you could play with 1 Unholy Rune and 5 Blood Runes.

I don't think I'm going to bother going for the top talent in Unholy right now. 34 damage to all targets in the area of effect, plus a 3 stack disease just doesn't seem powerful enough for a spell learned no earlier than level 60. If the AoE stays with you as you move for the duration, it might be a little better, and it will depend on how damaging the disease is.
It does move with you, it's like a damage shield of sorts - but deals damage to everything within close range. It does 76 damage per second to all enemies in range and within 3 seconds puts up a stack of 3 diseases on the target.
3 extra diseases on your target, plus improved blood strike, adds an additional 1000 damage to each blood strike you hit the target with.
Unholy (and the death knight combat system in general) is all about finding combinations of abilities that benefit each other.

Blood will probably be the better leveling tree. There are a lot of self-healing/leeching abilities overall (including blood presense) that will make survivability alot better for solo/partial group work.
For parties, you can still tank, as has been pointed out. Each of the trees has decent tanking talents in it, which seems to be the way Blizzard is leaning the Death Knight - being a viable tank without having to respec even in a DPS tree. (Something that I wish they would try to do with the other 'tank' classes to aleviate the lack of tanks, but maybe they're testing it out here first before making drastic changes to see if people actually DO tank)
Blood also has a lot of strength boosts (along with easy access to the one in the Unholy tree) which means higher base damage. I think that will be the better way to go, because I am cynical about Blizzard's itemization process (I have a druid, 'nuff said) - A high strength and base will let you use warrior gear and itemization more effectively.
I know that DKs are supposed to not be reliant on spell damage and odd caster stats like that, but according to the talent build Wowhead has up, there is a spell hit talent. That implies that spell hit will effect some of their abilities... Look, it's just something i'm a little cautious about. :)
Deep frost also has some potential. Hungering Cold + Howling Blast, Frost Strike, Annihilation to make Obliterate (another powerful-looking ability) not consume diseases 90% of the time... But, I think frost will end up being a "Level 80"/end-game thing, because it seems like it will be reliant on having a full set of talents to really flesh it out.
Unholy? I dunno. Warrents testing. I question how powerful they are going to make the ghouls and if it would be worth it. Alot of utility, and some very nice single-point talents, but overall it just looks like a niche build tree. (Possibly PVP, but there are a lot of good talents in the other ones for that, too, such as all the control frost has)

Well, I'm leveling my DK unholy right now and it's pretty fun, but nowhere near as effective for single-target grinding as blood is (yet). Might be better when I get obliterate.
I did just pick up death and decay though, so maybe I'll try some aoe grinding =P
