I'd have to say on my resto shammy, interrupts and silences, especially getting chained interrupts from multiple mobs is fun.
On my dps toons, nothing in particular although being jerked around the room by mobs with death grip like abilities is annoying.
I think on any toon, the biggest pain would be the Leet Uber player (whatever spec here) that decides to jump in a room full of mobs just to 'scout' things out, and aggro's the whole room at once somehow. I think that's called the NoobzDeathGrip, aka a leisurely walk back to my body. >.<

Healing reduction debuffs.
It really sucks when you're waiting for the tank to get low and cancel-casting big heals and then as soon as he needs it, the tank gets hit with an MS/Curse.
I would say threat resetting is the most annoying.
Not only that but when your yelling :
: FFS MAGE DECURSE THE GOD DAMN TANK YOU NUBSTAIN
and the mage goes :

I have some new ones after playing through Violet Hold so many times.
When tanking, I hate mobs that punt you back when there are spellcasters in the group. Trying to wrangle all the mobs back into melee range is a headache.
Spell reflection. Nothing like owning yourself with your own Firebolts. Mobs in Violet Hold do this, but it's most annoying with that stone giant boss in Nexus, especially when you're the only caster in the group.
Finally, blinking behind you. Again, mobs in VH do this and I have to corral the mobs back in front of me again.

Running away and healing.
#$%^es me off so much when I'm about to kill a mob and "oh noes" he runs into a pack of mobs and heals himself to full, in which case, pop Shield Wall and Shield Block and pray they don't aggro more +_+

That happened once for a group of mine in Blackfathom Deeps. We were on the stone bridge near the end of the dungeon, with all the Twilight cultists on it. One mob at 10% health managed to slip away into the next group, pulling all of them and instantly getting healed back to full.
It got pretty hairy.

One of the biggest pet peeves I had about pre WotLK content: When a humanoid is about to die he "Runs away in fear!"... only to return to you about 10 seconds later. Sometimes with friends.
In WotLK they all fight to the death... instead of fighting to about 10% of health, running away, stumbling about in a circle, then working up the courage and coming back to attack you.

Definitely mobs running in fear and bringing other mobs with them, and when those other mobs run in fear again they bring other mobs, duh :P I'm talking about murlocks :P

Very annoying as a pure melee class are the dark shades in Scholomance.
They start as humans (or whatever they are) and when coming low on health transform into dark shades.......imune to any melee attack.

Mana burning and silence. You can trinket\EMFH fear and things away, but you can't do that for silence. >.<
