You can easily get gear to hit 490 defense without putting points in Anticipation. You don't need to put any points in the Protection tree to tank unless it's 25 man raids.
I made this chart a while ago for a druid, but it remains the same for warriors:

Basically you need 222 resilience to become crit immune. But you need to remember that defense also adds to your dodge, block and parry. It's never worth it to replace your tanking gear with resilience gear.
