For our guild, we have a really basic few rules we use when facing trash we haven't before (and to eliminate marking on pulls we do know).
First, if it has mana, it's dangerous. Mana users are the highest priority to kill -- they might heal, they might do AoE, there's all sorts of things they might do, so kill them first.
The sub-rule for that is to kill things from small to large. I'm not sure why we do this, but it helps us agree on a kill order silently, and tends to work out well. Most healer mobs are smaller than laser-spewing ones, and after the mana users are down, small mobs tend to be more likely to do weird stuff (nets, stuns, etc) than big ones.
If it's a small pull with big mobs, our rule for learning is to tank them as far away from each other as possible. To me, that's just common sense. Big trash tends to have AoE or targeted abilities, and if you can keep one out of LoS from most of the raid, that's a big win for simplicity. The second pull after XT-002 comes to mind -- if you're too far away, they won't launch runes at you, making the job much simpler. This did bite us a bit on the defenders in front of the keeper doors, but that was quick enough to figure out, and far less problematic than if we had kept them nearby (so they could lightning nova the whole raid without us figuring out to DPS the spark).
What sorts of rules do you or your guild follow for unfamiliar trash?

As a guild composed of ex-hardcore raiders, we still know what CC is...

Our mages were thrilled on the first trash pull past XT-002 when I handed out sheeping assignments. Our rogues love the trash before XT-002 because we like to kite it, and have them TotT onto one of the tanks. We've used hunters and DKs for pulling Auriaya without people dying to the pounce (and I'm going to give a shaman a turn this week).
Pull it and see what happens, then adapt. Mouseover any buffs & debuffs they do, figure out a way around them, and kill it.
This. Most of the time you can make a pretty good guess about what they do from the name and the presence or absence of a mana bar.
