When I first started I was that way too. Trust me, everyone at level 80 looks sweet. I don't care what race, gender, or class. They all look awesome to me. The hard, or rather time consuming part, is getting to 80.
For me I like warriors, paladins, and death knights the most. I like them mainly because they can wear plate, which means you'll be able to take on multiple enemies at once. You don't have to always worry about looking behind your back, and random enemies spawning near you. Don't get me wrong, I think every class in WoW is cool for their own reasons, but they aren't my playstyle.

You aren't going to get "stuck" in the healing role as a paladin just because they can not dual wield. Their ret talent tree is their DPS, they dont need two weapons to DPS, thats more fury wars and rogues. If you cant decide and seem to be leaning heavy on the melee classes, I'd say try the paladin out. You can cover any role in a group depending on what your talents are. Tank heals or DPS

If you are a warrior expect to be asked to tank, expect arguing with a noob who doesn't know that warriors can DPS, and most of all expect the unexpected. My first few warriors were fury (the spec with titans grip) and to be honest, I absolutely hated it. Next I saw the only other trees were Arms and Protection. I wasn't interested in tanking and some people on my server told me that Arms was only PvP. Yep, they lied alright, Arms was a great PvE spec and IMO it's a lot more fun to play than fury.
If your a shaman people will ask you to heal, you will need to know all of your totems and how to use them in each battle and which ones are necessary, and as you pointed out being slightly weak in PvP. Shaman have great abilities, and with dual-wield it can be really fun (well all shaman specs are fun) but it may not be for you and no-one wants to get to level 40 to find out that their dream talent sucks for them.
Shaman are a lot more versatile but Warriors have more race choices, choose whichever you feel comfortable with, and don't let someone influence you by saying that Shaman or Warriors suck. Have fun.

I do believe you have answered your own question without realizing it, shamans seem like the class for you.
Also keep in mind, groups are usually pretty easily found for them because the skill they get at 70 is invaluable in raids and some 5 mans.
