Well, in my experience, there's usually a trade-off regarding AoE vs. single target tanking. Unholy provides great AoE threat, and Frost does pretty good at it as well (it loses some AoE threat to gain some crowd-control). Blood is the worst at AoE tanking, but isn't horrible at it. Plus, Blood has a little more survivability than the other tank builds.
As far as duel-wielding goes, I cannot comment. My opinion is that I waste too much weapon stats on hit (or I end up dealing with more misses) when I dual-wield than tanking with a 2-handed weapon. I'm sure you can take as a duel-wielder, and it certainly looks cool to do so. However, I never feel I am as effective as I could be unless I am tanking with a 2-handed weapon.

The only real benefit you get from DW tanking is double 1h tanking weapon. Which, with SG, ain't really that good either...:P
Parry gib doesn't happend. Warriors got higher chanse to be parried than a DW DK tank.
And like Onyx said, you'll be low on hit, and miss more, etc.
