I would suggest you read all of the patch notes (from any patches that were released since you quit) and all the guides and faqs available online. Are you planning on getting Wrath?

FOTM = DKs, Feral (cat) Druids, Pallies (to some extent), and there are still some FOTM Fury warriors whining and $%^&*ing, but the ones that rolled them because they were "OP" have mostly re-rolled again (in my experience).
My advice, avoid these classes like the plague unless you want to play them for any reason other than people view them as OP.

Dk/ Pallies / Rogues are FoTM.
Check your server and try to ask a couple of guilds of what the server lacks in, although if your going to roll a druid you shouldn't worry about whats needed since you can fulfill every role.

Really? Whenever I raid, I seem to be the only one in them. Am I missing something? Unless you mean PvP, which I agree with.
EDIT: This may just be something with my server, there never really has been too many rogues on my server.

Don't listen to the people who say, check your server, and roll whatever is lacking there. People who do stuff like that are the ones who see WoW as a chore, rather than a game. Roll whatever interests you.
