Hunters are about CC. Chain CC their healer. Have the hunter kite melee away from LoS and their healer while you drain their healer. Don't chase pillar humpers. If you do, plant traps so they are forced to a slower pace. Your #1 concern is outlasting them. Try to get them into the open so you can nuke them.
Usually melee will have a 1 track mind. "Kill 'X' at all costs.
Keep track of where your hunter is and don't let him chase to the point of stressing you because he is very vulnerable to burst.
Other than that, it really just depends on what class you are up against as to what strategy you use.

We are pillar humping because youll burn the S*** (have to stress that) out of our mana otherwise. A healer that does not LoS a priest is a dead healer.
Deal with it by fearing them into the open (gauge when) then having your hunter drop a frost trap (the slowing one.) Thats all the time you need to mana burn the person in question. Rinse and repeat until the caster goes desperate from lack of mana.

You can try using LoS to force him to expose himself. Target of the other teams melee should try to LoS himself from the other teams healer, which would also LoS the melee from his own healer. Keep constant pressure on both, that way the other teams healer has to decide between LoSing you, to help himself, or getting back in view to cast on his teammate. It requires a lot of target switching; hopefully you will force him to either overexpose himself, or else he put him in a situation where he will react too slowly to save his teammate. Either way, be prepared for a long ass battle, there's no quick solution to these types of fights.
