Any class can top the DPS meters if they're played correctly.
Any class can be at the bottom of the DPS meters if they're played by someone who thinks that mashing one button over and over is "leet."
It's all in the playstyle, not in the character.
But for the second part of your question, the "raid-useful" part, Shamans can provide helpful totems and Bloodlust, Boomkins can boost spell crit rating for casters, and mages, priests, and druids are all valuable for their raid-wide buffs (intellect, stamina/spirit, Gift of the Wild, respectively). So really, just pick whichever one you like playing most, and learn to use their abilities well.
