Yes. Dispel anyone clean ASAP. This is so you don't have to rely on even
more
RNG trying to dispel a specific enemy buff that really hurts amongst a bunch of fodder buffs. The earlier you dispel stupid buffs like Fortitude and whatnot, the higher the chance that your Dispel will actually get rid of that critical Innervate or well-timed Power Word: Shield.
Disc. Priests are perhaps one of the trickiest classes to play the dispel game with. Several of their main spells (Penance, PW: Shield, Flash Heal, etc.) give an additional magic buff to themself, which can add quite a hefty amount of GCDs that your Priest will have to spend dispelling him. Still, it is worth the time if he can avoid being mana burned and still keep the team up. You really want to get rid of Fear Ward especially since you're running Priest/Warrior. That double-fear is the game maker for your comp.
I believe the maximum dispel resistance one can get through passive talents is 30%. This applies to DK diseases as well. Discipline Priests are unique in that having Pain Suppression gives the PS'd target a 65% dispel resistance. If the class also has magic dispel resistance, it can go anywhere from 75-95% dispel resistance. Don't bother trying to dispel a Pain Suppression'd person. Instead, have your Priest buddy mana burn him.
Keep in mind that Mass Dispel prioritizes Divine Shield/Ice Block/Hand of Freedom first (despite the fact that Hand of Freedom is dispellable by normal means too, although there is a chance that you may dispel a different buff if the Pally has any more.)
Major Dispel Priorities:
- Hand of Freedom: You have enough of a problem chasing down enemies faster than you as a Warrior. Your Priest must dispel this ASAP.
- Any roots: Again, you are a Warrior. It's very nice to save Intercept/Charge/Trinket CDs for when you really need it.
- Immunities: Obvious reasons.
- Innervate: If you want to OOM in an endurance fight and lose the game, don't dispel this.
- Absorbents: This includes enemy PW: Shields and Mana Shields. However, do note that Mana Burning a mage with Mana Shield means he gets more mana drained due to extra dmg = extra mana burnt.
- Fear Ward: Duh. Your comp revolves around being able to fear twice without really being able to get feared yourself (especially if both of you are Undead.)
The only things you
shouldn't
bother dispelling are:

Very Seldom
Lifebloom (but very situational. Only when the target has extremely low life; in that case, have the Priest use Power Infusion/Platinum Discs of Swiftness Trinket and Penance/Holy Fire/Mind Blast/SW:D to help you finish off. Otherwise, dispel because the overall heal is still significantly lower than the "dispel heal.")
- Levitate alone. They're just trying to trade 100 or so mana for dispel's hefty cost. Besides, it can be dispelled with a single hit.
- Unstable Affliction, one of the few spells that will almost always hurt you when you dispel it, for obvious reasons. You can gamble and continue dispelling if your target already has a ton of painful debuffs and roots and whatnot, but a gamble is a gamble.
- Other minor, stupid buffs that don't give any power/regen/health/absorb/etc.

make sure your partner has the dispel glyph. its a dispel and a heal at the same time which saves GCD's
