1. Tenacity (Bear) Pets are good for leveling because they hold aggro, have talents for higher health and armor but are not meant for heroics, dungeons or raids.
2. BM Hunter + Devilsaur (Ferocity) is the highest DPS pet for a BM Hunter for pve.
3. No such thing, you cannot have a build that is meant for both and expect it to do well for either.
4. Survival is the Highest DPS Raid spec for hunters right now. MM is not far behind it while BM is in last place but does provide some good numbers and provides a 3% damage boost to the raid upon a pet crit if there is no ret pally in the group.

You're right that picking up your Hunter after a year is going to yield a significantly different experience.
1&2: A Ferocity pet is generally the best DPS combo (see the comment on Devilsaurs, but there are lots of great Ferocity pets) but with a Tenacity pet you can (off) tank some instances if you spec for it and a Gorilla's Pummel ability is great for disrupting Mages in PVP.
Tenacity pets are useful for AoE farming and questing since you can round up lots of mobs and Volley them down coupled with Thunderstomp.
It comes down to personal preference really. Try both and see what you like the best. A Ferocity pet will yield you more DPS than a Tenacity (or Cunning) pet if that's your main concern.
3. You can PVP with your PVE spec, but if you're serious about PVP you might consider taking advantage of the dual spec feature and having separate PVE and PVP specs. You could also just grab a Cunning pet which are nice for PVP.
4. Not sure what you mean by "direct DPS approach"; Hunters are direct DPS no matter the spec. Both Survival and Marksman rely on personal DPS rather than the pet if that's what you mean. Personally I prefer doing the DPS myself rather than having to rely on the pet.
I'm a Marksman Hunter that has dabbled in Survival and it seems to me that SV is more rooted in DoTs and procs for it's damage and Marks is basically stacking the damage output (though is likewise subject to random chance in Wild Quiver and Piercing Shots to a degree)
