Getting over 900 resilience is top priority for a Priest. Be sure to get ~6% hit (so your dispels and fears never miss, meaning you'll almost never lose a game due to very stupid RNG) and the Mooncloth set (because guaranteed mana regen > luck-based RNG talents) by the time you're completely done with your PVP set.
I'm not too sure about Ret Paladins, but I'm going to guess that ~600 resilience and some very powerful PVE gear would be best. Hit is still important; a missed Hammer of Judgement will lose you games.
Things wrong with your Disc Priest's talents:
- 0/3 Silent Resolve. This should be 3/3, for any spec. Dispel resistance is immensively important, especially against mirror matches (Pally + Priest is a popular combo this season.)
- Absolution, while not necessary, is highly recommended. Dispel is one spell that you should be spamming a lot against Priest teams.
- Other than those two points, it's actually quite a solid build. He's taken Divine Fury, which is good because your Priest should be supporting you in damage to finish off opponents. Power Infusion + DMG spells = quick and painful.
When fighting against stealth teams, try to get your Priest in combat ASAP. This can be achieved by:
1.) Engaging the enemy, whether with a simple dispel, DoT, mass dispel around the pillar, etc.
2.) Mass dispelling the stealthy. This requires a bit of prediction and costs a hefty amount of mana when done liberally.
3.) Holy Nova spam. This is also a bit costly, and I believe Sap can even outrange Holy Nova.
The advantages that a stealth class can get from getting the opener while you're OoC can already decide the game. A Sap on the Priest = a potentially dead partner. Sap + Stunlock + Blind literally could turn the game into a 1v2 for maybe half a minute.
Glyph of Psychic Scream = big WTF. Fear never lasts the full duration in any PVP. Why would you want to raise the cooldown of the only defensive spell you have when your Holy/Disc school is locked? Replace it with something that doesn't nerf your character, like Glyph of Inner Fire (great for undergeared people) or Glyph of Renew (stronger "burst" heals = better healing against burst.)
Get the minor Shadowfiend Glyph.
Combine your class synergies. I'm not sure how Ret Pally + Priests work, but as mentioned before, they are a popular combo that probably works. Be sure you've got good communication going on between you to (such as through voice chat via Ventrilo.) Download all the essential PVP addons (Gladius, MSBT w/ warnings on enemy casts such as Cyclone/Polymorph, etc.) Plan out and execute things such as a Repentance -> a Psychic Scream for an even longer CC. Set up a HoJ on an open healer to allow your Priest to pop Power Infusion and start mana burning like mad. Get a melee out in the open to chase your Priest, then give him a Hand of Protection and have both you and the Priest burn him down quickly while CCing his healer (via HoJ/repentance/Psychic Scream.) You're not going to win matches by just hitting your strongest spells and healing.
Don't mean to advertise, but Wowhead isn't exactly the biggest home of Gladiators. Arenajunkies.com is a great place to go to for future Arena questions.

*1st post was edited, contains a few sample "synergies." Priests are a very offensive class, especially with Power Infusion handy. Use that to your advantage, since you seem to have trouble soloing players. You also got awesome CC, what with being able to Repentance, HoJ, and Psychic Scream. Use these together for longer CCs, allowing for more burst time on someone else! HoJ into a Power Infusion'd Mana Burn spam is one really cheesy way to win against Healer/Drain teams. Hand of Freedom means those Mana Burns won't be interrupted either (unless fighting a DK, whose interrupt pierces HoB cause Mind Freeze is a magic spell.) Bait a semi-weak enemy to your Priest while scaring his healer off into a pillar/corner, then BoH your Priest, both of you focus all your burst on him, and CC the healer with fear/HoJ/Repentance.
I've never teamed with a Ret Pally. My partner for S1-3 has been a Warrior. I am currently gearing up my Priest after quitting my DK so I can one again 2v2 with my Warrior for S6.
Imp. Flash Heal isn't that important, so trade the 3 points on that for the 30% dispel resistance. You can trade either Martyrdom or Imp. Fort for 2/3 Absolution, but that is a matter of preference. Since you're having survival issues, Imp. Fort + Martyrdom might be better since your Priest is dying before he even gets to OoM.

When 1v1ing certain classes (which will happen most often in 2v2s, for obvious reasons), beware of whether or not they can dispel.
1v1 against Mages are towards their favor. Do note that they can spell steal Hand of Freedom and Hand of Protection, which will basically give them a free win, even if they're at 1%.
Priests can dispel both and even your Bubble, so yeah. Still, it wastes their GCD and gives you a couple of heals at the worst scenario, and a bunch if he's CC'd.
Shamans can purge both HoF and HoP, but can not steal them.
Yes, certain addons are necessary. In anything that's remotely competitive (be it sports, business, video games), you want to take all precautions to make life as easy as it can. Only then can you focus on actually playing than having to check your entire peripheral vision and Blizzard's ugly and unintuitive UI frames to see whether or not an incoming game-breaking Polymorph/Cyclone cast is incoming.

NP.
Recount can be a good analysis tool. For instance, you can check out who took more damage overall, how much the bursty crits hit for, how much your heals generally healed for (which is nifty info when fighting against MS Warriors/Rogues/Aimed Shot Hunters.)
I'd recommend addons that can move your bars so you can focus on the action more than looking at the top left corner of your screen. Addons like Pitbull and XPerl allow full customization of player bars, so you can place your own health and your enemy's health/debuffs/etc. near the center of the screen.
OmniCC and ClassTimers are good for watching important buff durations and cooldown timers (which is extremely important for you as a Ret Pally.)
I hope you're not clicking or spell scrolling (big mistake of mine from season 1-2.5!) Bartender and Bongos are two great addons that allow you to easily customize and keybind ALL your spells without having to sift or click through rows. For instance, you can bind 1 - 5 to your most used offensive spells, Shift + 1 - 5 to your defensive spells, Ctrl + 1 - 5 to your trinket/macros to give yourself HoF with one click, and so much more.
Screenshots of my UI (edited version of Blinky's, give and take a few addons):
http://img8.imageshack.us/img8/8440/debuffs.jpg
Big buffs and debuffs on the enemy's bar, along with their durations. Allows for easier tracking of CC's, DoTs, etc.

The procs are now very visual, as well as stimulating to the ears. Any time my Surge of Light procs, the game will play a sharp "zap" sound and shoot out a wavy, attention-grabbing notification. This can be edited to include other events, such as an enemy player casting Polymorph on you.
http://img8.imageshack.us/img8/336/overheal.jpg
You can see the amount of incoming heals and that different cooldown times have different colors (over 30 seconds = red, over 7 seconds is orange, under 7 is white.)
Cooldowns are placed near my own health bar so that I can easily see the cooldowns of all my spells without having to shift my eyes to the bottom corner of my screen.
Grid saves a lot of clutter from smaller resolutions, as well as accurately calculate missing health and show dispellable debuffs (although do beware when fighting against UA Warlocks, as Grid shows only one debuff at a time.) It can be customized to include HoTs, DoTs, etc.
Satrina'sBuffs place my buffs and debuffs in a convenient place. I can see them in the heat of battle instead of looking to the top right of my screen and driving my attention away from my own health.
Focus frame is small but handy, as it shows the focus's target as well. Useful for avoiding very deadly casts (Cyclone, Mana Burn) or preparing yourself to SW:D out of CC's (Polymorph.) Quartz will show me enemy and focus cast bars on top instead, as seen in the third picture. The red bar compensates for the lag and shows the "true" cast time (though I wouldn't always rely on it if your internet isn't consistent.)
