RP Servers are really just to find more mature people (not that you avoid the Anal and chuck norris jokes, but there are fewer of them), but you never (super rarely) really see actual role playing going on.

This isn't accurate, depending on which RP server you go to.
On the realm I frequent (SteamWheedle Cartel,) there are a good handful of RP guilds about.
And on Moonguard, you just have to take a walk through Silvermoon to see a hefty amount of roleplayers.

Where do I start.. First up. If you don't plan on roleplaying, ever, DON'T ROLL ON A RP SERVER. This wasn't aimed at you OP since you seem interested, but roleplayers sadly tend to be in a minority even in roleplaying realms these days, since the realm policies actually don't mandate anyone to roleplay, but to "just" avoid breaking immersion for other players (such as speaking out of character in /say or /yell and basically attention-whoring when people are trying to roleplay by spamming AoE spells and yelling "lolololo" or the like.
Secondly, due to this fact, a lot of the servers have their roleplying based on guilds that hold in-character meetings, do in-character dungeon raids and so on. There are some bigger or recurring in-character events on a server, these are at times showcased on Blizzards community events -newspage. There IS roleplay and, depending on realm, there might be tons of it, but this also usually means you'd have to know people to find any events or roleplaying going on. Many servers have channels for this, usually it's just named LFRP so you can join it by /join LFRP. You can ask about it in a city channel or if you're bold enough, on the trade channel if LFRP is empty, on what the channel is cald on the given realm.
Roleplaying, due to people who derive their fun from disrupting other roleplay for some weird reason, tends to be held out of sight, which is why you might not see it often. That is not to say it is always so, for example in my main server (The Sha'tar EU) had a relatively massive RP event in Warsong Hold with infirmaries, player run quests and all. There were usually 20+ people around, probably closer to a hundred in peak hours which is a lot of people in a small area. Thankfully the portion not interested in roleplay didn't try to ruin it at any point, in fact a few obviously never before roleplayed characters tried to take part to the best of their abilities - which was welcomed of course.

Now, as to roleplaying itself - the roleplaying realms are just basic PvE or PvP realms with additional rules to player conduct, which I briefly touched on my first post. There are no specific ways to liven up one's roleplay at all, which I find kind of a shame. Sure, there are some items and such added to the game for roleplaying a city guard, such as the plate armor vendors sell gear that is equivalent of what a Stormwind Guards wear, or some random items like the picnic basket and stuff from Loot Cards.
However, there are some roleplaying addons you can find, such as MRP/FlagRSP that enable other addon users to see your status, if you're roleplaying, looking for contact and such, adding some text on what your character looks like and possibly a snippet of their backstory. Some addons let you create objects or quests which you can hand out for other people using the same addon. I consider that at least the RP flag option should be added as a game feature in itself, but, if it hasn't come in 5 years, it probably won't be coming at all..
