You actually don't need any XML to write an addon -- even one with a GUI. Anything you can do in XML can be replicated in Lua, which is also written in a simple text editor. As long as you have some sort of grounding in programming, the best way to learn how to code for WoW is to read the code from other people's addons and ask lots of questions. The Wowace community is amazingly friendly and encouraging towards new folks.
The only exception to this is writing a proper ace3 addon since the framework assumes the pressence of an embeds.xml file XD
