If you want the maximum benefit from a single profession, you could take tailoring (for the cloak enchant), JCing for the gems/trinkets, BSing for the extra sockets or letherworking for the cheap leg enchants/bracer enchant . However as this is a long and tiring process you may want to consider using a "gathering" profession instead.
I.e. Mining (50+stamina), Skinning (25+crit rating) or herbalism (Lifebloom), all with their own passive things. (+ you'll be able to sell alot of things on the AH $$ ;))
In short, if you want to max/min go for JCing (as it's the profession with the greatest benefits atm), or go for a gathering profession should you enjoy having a slightly easier time skilling and perhaps make a buck or two whilst doing it.

I took Mining and JC and havent looked back.
So.................mining and JC are best
What a stupid logic...
Best prof, no matter what class is BS + JC. It allow you to choose exactly the skills you want, you can open locked doors and every new raid content patch, you will make alot of money.
But most convenient is Inscription + BS/JC (it allow you to skip SoH rep farming and give you an extra hearthstone).
