I leveled from 1-70 as Arms then spent all of TBC as Prot, and have remained as such through Wrath. I've never once tried Fury but with the advent of dual specs I'm giving it a go.
I've read the stickies here, most of the posts, checked other forums and my normal resources as well. I'd like some feedback and suggestions specifically in regards to my gear (ideally a pre raid gear list), gems and chants. I'm pretty set on my spec but feel free to offer advice there as well.
My current gear is essentially what I was able to toss together from what I had gathered while leveling up etc. so I realize it's less than spectacular.

Forgot to include what I plan to do, I'll mainly be doing solo PvE and 5 man stuff up to heroics, dabble a bit in PvP and eventually with appropriate gear move to 10 man content.

Spec looks fine. Apart from unbridled wrath is absolute poo (seriously, you hit things with 2handers...you don't need UB) and piercing howl is less than useful for PvE. Everyone you raid with can deal with 'runner' mobs better than you, so let them. I'd shove those three points in imp. cleave instead, personally. Also, if you've got imp. charge, it's worth getting tactical mastery instead of iron will - you'll lose less charge-generated rage from swapping to zerker stance.
Hit rating is quite high - you could easily stand to lose up to 100 points there I'd say, without too much trouble. Crit is really low - getting that up to about 30% should be a priority.
Gear-wise,
belt
from heroic nexus is just awesome and totally worth the farming for it (not a bad drop rate, either, so not nightmarish to get).
Current gun is really not great (obviously, for it's tanky-ness) - 15 emblems for
thrown
is a bargain. Or

(crafted), or

(heroic UK).
These
(heroic AN) or

(crafted) beat those leather bracers on crit and strength easily.
Boots
(exalted with ebon blade) will last forever. Honest.
Neck
, another bargain at 25 emblems, and lasts a long time.

Rings I just can't remember what I had, and now I have Naxx rings. I think

Obviously, you'll be wanting to grab the t7 chest and glove tokens ASAP anyway, so you know what you're upgrading to there. Can't think of gloves worth picking up in the meantime, tbh.
Having said all that, you're obviously on the right track with gear anyway ;)
Gems and enchants - I gem and enchant for strength and to keep my unbuffed crit at 30%. Where neither of those are possible, AP and expertise are acceptable I think.
Tubey's all-in-one warrior guide (in the helpful threads sticky at the top of this forum) really does have everything you need, tbh.

Thanks a TON for the feedback fellas, I did some work last night as well and swapped a few things up prior to reading this but I'll do some tweaking to my spec and swap hands with my weapon as well.

My thoughts for Gems/chants are as follows, please let me know if you agree:
Chants:
Weapon- beserking or massacre
Hands- crusher
Wrist- greater assault
Chest- powerful stats
Cloak- greater speed/haste
Boots- Tuskarrs vitality
Legs- ?
Head- Arcanum or torment Ebon blade revered
Shoulder- lesser/greater inscription of the axe Sons of hodir honored/exalted
Belt- eternium belt buckle
Ranged- ? scope I'd assume
Sockets:
Red- bold scarlet ruby
Yellow/blue- jagged forest emerald

Talents:
I wouldn't follow Blackbride's spec advice. Not taking 5/5 Unending Fury is seriously gimping your dps, as those 3 abilities will make up 50% of your overall damage. Unbridled Wrath is basically a necessity for raiding due to the -10% nerf, to be able to maintain rage for a decent HS uptime. 2/2 Imp Berserker Rage is also a necessity for raiding, again to keep rage for high HS usage. Heroic Fury is not worth the point, except if you want to pvp. There are a couple of fights it would be helpful, but not enough to justify it.
I will say, if you are primarily going to be doing solo and heroics, you would be better served by going 5/5 Commanding Presence, although in raids you don't need that since you should have Imp Blessing of Might.
Usually Imp Execute isn't worthwhile, nor is having the Glyph of Execute. You will be better served by putting points in Imp Cleave and taking the Glyph of Cleave, it really helps on aoe pulls. It is really nice in Ulduar, since so many fights have multiple mobs. At lower gear levels it will be hard to have the rage to cleave much, so you will need to experiment with it and see if it fits you.
Gear:
Swap your MH & OH. Higher dps weapon always goes in MH, and if they are the same dps then put the one with the slowest speed in MH.
I don't see any enchants, so if you can swing that go for it, it makes a big difference. Expertise enchants will help, since you are only halfway to the dodge cap of 26.
Gem-wise it looks ok, except for your helm. Put a Chaotic Skyflare Diamond for the meta, and then a Sovereign Twilight Opal for the blue slot. You'll need a second Sovereign somewhere else in your gear to keep the meta active. Unless the socket bonus is very good, don't worry about gemming for it, and just gem straight +16 strength gems, except for the 2 blue ones to keep the meta.
Scopes only work for ranged attacks, so you don't need one. Double berserking on weapons is best, but very costly. You could just put 85 AP on both weapons until you save up and hopefully by then have some 200+ dps weapons. The 22 agility to cloak will be better dps for you than haste. I would go with Icewalker on your boots, you don't need the hit but you need the crit. You should get an Icescale Leg Armor for your legs.
Future gear wise, you should try to get more crit, and you can lose hit rating for that. I like keeping my hit rating above 240, but below 300.

Next steps for me are as follows:
Socket gloves/bracers and add Bold Scarlet Rubies
Socket Belt and add Soverign twilight opal x2 (for meta bonus)
Socket hat with chaotic skyflare and bold scarlet ruby
Swap my pants to Legplates of Bloody Reprisal
Socket ring with Bold Scarlet ruby
Enchant legs with Icescale armor
Replace boots with Death Inured Sabatons (Ebon Blade)
Replace neck with Pendant of outcast hero
Replace shoulders with Giant Lord (Sons of Hodir)
Replace chest with T7 chest
Replace belt with Flame Bathed Steel Girdle (H Nexus)
Replace rings with Hemorraging Circle (H Gundrak) Band of Frosted Thorns (H Nexus)
Once gear replacements are done then I'll chant as previously posted but that should round me out I think as far as pre Naxx goes. Oh and slight tweaking of my spec as well once I log, new spec will be:

Mainly because I'm having a small rage problem and I have found myself using cleave a LOT, keep in mind lots of solo play here as well.
Any glaring ommissions or obvious faux paus?
