Herb or Mining?

I recently made a new character (BE priest) and am probably going to pick up two gathering professions (as I normally do).
So I'll be picking up skinning for sure, but I'm not sure what'll generally net me more money (out of herbalism and mining). Also, a profession that'll be easy to level as I level my char,not going out of my way to farm for several hours.
I know that this depends on server economy and such, but I'm curious as to what
generally
makes the most money.

I expect Herbalism to become much better than mining, since JC has been killed. You could take both herb and mining, but skinning is convenient for leveling.
More people will level alchemy and inscription once the JC mega nerf hits.
Care to fill me in on this JCing mega nerf? sorry i'm a bit of a noob%^& to the proffs forums.
Also onto the topic i would imagine for a warlock herbalism would be more beneficial for leveling because who hasn't wanted a free heal before? (plus when you life tap pop the self heal for mana and health?)
